This sounds like a great low-fat egg salad. Recipe from "The Diabetes Snack Munch Nibble Nosh Book" by Ruth Glick. Cooking time does not include time for hard-boiling the eggs. Comments from the book: If you love egg salad but have cut it from your meal plan because of the cholesterol, try this zippy recipe, which discards half of the egg yolks. With all of the taste of traditional egg salad and far less fat, it's one of this cookbook author's favorite sandwiches.

Porcini mushrooms have such a nice earthy flavor in this risotto. The addition of caramelized onions and a little bit of cognac really make it special. From Bon Appetit.

This is so good and so pretty! It's bright blue and the grenadine makes a bright red layer at the bottom of the glass! Be sure to serve it in a glass martini glass to get the great effect! I served this at our 4th party and received many raves. This is my first post - hope you like it.

From Bon Appetit, this is an easy side dish that goes very quickly. Fresh green beans are best, but this can be made with canned green beans also.

I found this recipe on epicurious.com about 3 years ago and have made it many times for get togethers. It's always the first thing to go, and I'm asked for the recipe almost every single time. It's yet another layered taco dip, but for some reason, everyone loves this one more than most. I cheat and use a purchased guacamole dip and it's a great make ahead for a crowd.

A very good version of scallops and mushrooms in wine sauce. I usually just slice the mushrooms rather than dice them - I like to taste 'bites' of mushrooms. This is from Pol Martin, a well-known Canadian chef.

This recipe is from Cooking From the Heart by Sam Choy. A few years ago Sam Choy had a restaurant hidden in the middle of the Industrial area in Kona, on the Big Island. It wasn't big on atmosphere, but the food was wonderful and very popular. I've had this stew there and it's truly a favorite of mine. Mochiko is a sweet rice flour.

This is a very simple, yet elegant entree which is especially nice for a romantic meal. It's best if you can find fresh dungeness crab, but even canned crab will work. This is a popular dish served in restaurants on the West coast.

I know that there are several recipes for this out on Zaar, but this is my absolute favorite. I think the balsamic vinegar gives it just the perfect touch. I usually make a huge batch of this and freeze them for easy future use.
