From Vij's in Vancouver. Adjust the quantity of cayenne in this recipe according to how much "heat" you prefer. As with most spicy casseroles, the flavours of this curry will improve on standing, but add the fresh coriander just before serving. If cumin seeds are unavailable, substitute an additional 1 tsp. (5 mL) ground cumin.
This was one of Mean Chefs recipes which I was lucky enough to adopt, have made it as stated and it is delicious!
I got this delicious recipe from out of a low GI cookbook called "Learn To Cook Low GI" by Lorna Rhodes. It is quick to put together and the taste is fabulous. You'd expect to make put alot more effort into something that ends up tasting this special. It healthy as well!
I love Greek style roasted meat, and I think lamb is the perfect roasting meat. I combined the two styles and came up with this recipe. It's juicy, flavorful, succulent, and unlike anything I've seen anywhere else. It goes especially good with a savory risotto and a dry red wine.
Lamb and rosemary go together so well. This is a nice dish to serve with mashed potatoes and greens. Very Australian, with style :) You can use the older and fattier lamb, just be sure to skim the fat first. If you use mutton, do it in the crock pot and cook till the meat falls off the bones, cool and skim.
