    This recipe comes from the wonderful book "Vegan Cookies Invade Your Cookie Jar" by Terri Hope Romero and Isa Chandra Moskowitz. Ive tweaked it a tad here and there, though. The cookies come out puffy, soft and with a slight mocha flavour. I think they are very pretty and everyone (vegan or not) raved about them. I hope youll enjoy them, too.

    This recipe comes from Dr. Oetker and is very, very good. It gets better and better as the cookies age and the taste is just wonderful.     This sweet, soft cookie is very popular during the holiday season in Germany and can be found on almost every cookie tray. It is super easy to make, too. Traditionally it uses three almonds per cookie, but we prefer to use just one, so this is a bit different than the others. If you like, try these with other nuts or maybe a flavoured marzipane. NOTE: These need to chill for 30 minutes.

    The original of this recipe comes from BH&G Holiday Baking 2004 and was designed to use with a cookie press. However I dont own one and thus just made cookie fingers.     This is another recipe from I.C.Moskowitz' and T.H.Romero's awesome book "Vegan Cookies Invade Your Cookie Jar", that I tried out recently. It makes for delish, chunky cookies with lots and lots of peanut flavour. The original recipe called for roasted, chopped peanuts as the add-in, but I didnt have any so I used pb chips and chocolate chips instead. Feel free to use the nuts or a mix of nuts and chips. Ive also posted my healthified version of this recipe.

The cookies are big, soft in the centre with a crunchy outside and mmmoreish taste. Chocolate, nuts and coconut, what more could you ask for?! :) Ive also modified the recipe to be more on the healthy side, which yielded a softer cakey cookie.
