Everyone (especially the children/grandchildren) loves these easy, nutritious and delectable sandwiches. Great for weekend dinners with potato chips, salad and tall glasses of milk. From THE REALLY GOOD FOOD COOK BOOK.
My friends and I used to make these when we were in high school. These things are definitely sweet! If you are like me and are not crazy about marshmallow, you can sub peanut butter. Could be good for an after-school snack for older kids. Definitely something older kids can whip up themselves, as the only appliance is a microwave.
I love the Meximelts at Taco Bell. However, I don't eat there a lot because sometimes, it gives me a tummy ache. But when I do, there are only two things I order-EVER! Chili-cheese burritos and Meximelts. One of my gal-pals worked there and told me what was in one. I couldn't figure it out because I was too busy inhaling it. So...here's my take on the Meximelt.
It seems like I got this recipe off of a box of Kraft Macaroni and cheese many years ago. As a single parent, I had to serve economical meals that my kids would like and this dish was the one they requested the most.
With all of the Canadians here in Zaar, I was surprised that I could not find a copycat recipe for the Canadian fried pastry sold as Beavertails®! Strange name, I know, but they are soooo good. Anyone who has been skating on the Rideau Canal is sure to have tried one and I have even seen them being sold in Halifax. I think they have something similar in America called "Elephant Ears". I got this version of the recipe from betterbaking.com. Dough can be made in bread machine set on "dough" cycle.
