    Since Greg is a trucker, he's often not around for supper — sometimes for weeks at a time. My girls and I generally eat a little differently when he's not home. They're not big into casseroles and neither really eats potatoes (other than fries!), so we eat a lot of pasta and rice dishes and not a whole lot of meat — which isn't a bad thing, but wouldn't go over well with daddy around!!

    Loved this recipe I found in "Quick Cooking". I reduced the amount of olive oil in the original recipe, and this turned out to be quick weeknight meal for the family. I served this with broccoli and bread.

    Quick easy recipe to make after a hard day's work. For the mashed potatoes use plain cooked potatoes mashed with no added ingredients. Just cook extra potatoes the night before and take out what you will need for this recipe. If you want a little spice add 1/2 tsp hot pepper flakes I like a bit of Tartar sauce and a green salad along side or a couple of steamed vegetables. Great summer dish. This recipe goes a long way from one small can of salmon. I would like to stress use leftover cooked potatoes not left over mashed potatoes that already have got a lot of extra ingredients in them!

    This is my new favourite pizza! I will often make a double batch of the chicken/BBQ sauce mixture and freeze it. I usually caramelize the onions by frying them until soft with 1 Tbsp of butter and 1 Tbsp of brown sugar. This makes the pizza very sweet but I like it that way;)

This is from the cookbook Mexican: Healthy Ways With a Favourite Cuisine by Jane Milton. A more glutinous rice dish than the ever popular Spanish rice. Is this an authentic Mexican recipe? I don't know, but I do know we like this dish!

    This delicious pasta is very simple to make, yet it tastes as though it took hours. There are many variations of this recipe, but I've found this to be the easiest and best tasting. It is by no means a low-fat meal, but if you go for a nice big walk after you eat, you will think this pasta was worth the extra exercise!
