    This is a wonderful roast handed down from my Polish grandma. We prefer to eat the roasted pickles with the meat, but you can discard if it's not for you... it's the flavor you're going for. This recipe also works well with venison roast. My gram always used to say it was the vinegar in the pickle juice that made this roast tender. Not sure how true that is, but "gram is always right". For ease of clean-up I started using a cooking bag, but you can use your prefered method of roasting. The house will smell amazing! NOTE: This will not make a gravy, but more of an au jus for the meat.

    I haven't had these corn fritters in years, and made my mom's recipe tonight. They are super easy and really tasty. They basically taste like pancakes with corn in them. I think they would be a great way to sneak some veggies into your pickier eaters diet.

    Finally got to try this...it was deeelish, but then again, I've never had "real" eggnog. Mom always makes boiled custard for Christmas and I could literally bathe in that stuff. I love that custard stuff so much I request it year-round. Occasionally, I get some. This is great and I hope other diabetics will give it a try.

    This is a strange combination, but trust me, it is very good! The story goes that Elena Ruz, a society young socialite for which the sandwich is named, would stop at this little all-night restaurant, El Carmelo, in Vedado neighborhood in Havana Cuba, after leaving the dance with her group of friends. She asked the waiter if he could fix her this sandwich after she told them how to make it. After that she would always ask for the Elena Ruz Sandwich and to this day that is how the sandwich is known. This recipe has been printed on many of the Cuban Food web sites. It is great for leftover turkey. Update 03/13/2006 you can also use sweet rolls(the kind you use for a media noche). However, the real McCoy is white bread without crusts and lightly toasted and then the cream cheese would be spread, then the turkey and strawberry jelly on the other slice and voila!

If you want to make it even lower in calories, use light bread. I like using regular thick-sliced white bread; sourdough is a good option too.     Should you make my Kielbasa, Homemade Kielbasa, Fresh Polish Sausage, Recipe #386789, this is a very good way to cook it. This is better even than simmering it in beer. Servings, of course, depend on the amount you are cooking! As to cooking time, remember, this is RAW pork; it requires sufficient cooking time.

    I had an awful craving hit me for one of these wonderful K-mart Sub's and HAD to have one! I searched high and low and finally found a woman on a message board that used to work the deli counter in the late 80's at a K-mart in Dayton, Ohio. This was one of the same stores that my Mom would take me as a kid to get one of these wonderful sub's and a frozen Coke! I used to stand in front of the counter and watch them make these sub's and remembered all but one of the ingredients. Make sure that you wrap your sub's and allow them to sit for 30 minutes before serving or they are not the same. This allows the bread, meat and veggies to show some love to one another.

    I searched the internet for a recipe to use up some left over mashed potatoes. This is what I found and made. It's simple, easy, and a great way to use up left over mashed potatoes. This is one recipe that I always come to when I have leftover mashed potatoes. I once made these and I wasn't serving them right away, so I let them cool down then I froze them. A few weeks later I removed them from the freezer let them defrost and they were just as good. I have even added leftover chicken pieces and leftover meatloaf to this and it was yummy.
