I am not sure where I found this recipe, but these are great appetizer's and they freeze so well. The family loves these for a quick and easy snack after work or school. Parmesan cheese can be substituted for cheddar if you prefer. Finely chopped spring onions, can also be added or substituted for basil.

This dip is total decadence for artichoke or brie lovers! Served warm with party rye, sourdough bread or crackers, it is sure to be a hit! You can use marinated or water pack artichokes depending on your personal preference. I remove the rind from the Brie prior to use.
A beautiful way to present your next vegetable platter at any party or potluck. This is fun to make, but will take some practice making the flowers out of the veggies. You can chop and carve the veggies up to 1 day in advance and store them in a bowl of ice water in the refrigerator. Prep time depends on your skill but I had to put something. Serve with a tasty dip.
Adaption Note: Ground pork wasn’t used as a part of the original recipe and cracker crumbs were used to coat the meatballs instead. Servings Note - 26 servings based on approximately 5 meatballs per person.
Oh, you HAVE to try this one!! My family LOVES dips and spreads, and even the guys got really into this one. I even caught my uncle (who thinks guys are too "macho" for dips), eating it straight from the bowl with a spoon!! Best when made day of, and lettuce added just before serving. It gets soggy:(
