An awesome, healthy way to make Eggplant Parmesan without having to fry anything.

    Recipe #248620

This sounds good for anybody looking for a quick and tasty meal. It is vegetarian too which is always great in my books. I originally found this recipe in the September 2008 copy of the BBC Good Food Magazine. The recipe states that the dish can be frozen for up to a month. It says to just defrost and bake in a medium oven for 20 - 30 minutes until piping hot.

A recipe by Giada off Food Network. This recipe was awesome!!! I didn't have Marsala wine so I substituted some homemade stuff. I also substituted green peppers for red. Delicious!!!

Super good, tho I've never been to Carrabba's so I can't compare. The ingredient list says Caprino cheese but any goat cheese will do. The software wouldn't let me add that.

I found this recipe on allrecipes.com and made it ages ago, and positively LOVED it! Then, for some odd reason, I forgot all about it. Today, when I was going through my allrecipes cookbook, I rediscovered it, and just HAD to post it here. You gotta try this... it's definitely worth all that chopping!

From Everyday Italian on Foodtv.com. This recipe gets better with age. On the show, Giada suggests making it a day ahead to let the flavors get together, although it can be served the same day as well.

A copycat recipe of the Pasta Milano served at Macaroni Grill. Yum Yum!

    Recipe #50385

This is a good copy cat version of this delicious favorite. It is modified from a version I found on Recipegoldmine.com

From "Lidia's Italian Table". The directions look very long, but they are easy and fool proof. You can have this dish with butter and sage or your favorite pasta sauce.

This is directly from The Olive Gardens Website: www.theolivegarden.com. This is not any Knock off! You are making the REAL DEAL.

I'm posting this recipe for eggplant and or zucchini. No need to peel the zucchini. I've also done both in one recipe. You can also just oven bake the eggplant and dip into sauce for appetizers. My husband and I just love it! Especially when the eggplant and zucchini is home grown! No buttermilk no problem just place 1 teaspoon lemon juice or vinegar in a 1 cup glass then top with milk let sit while gathering the rest of the ingredients.

We make this pasta dough and it turns out perfectly every time. We use the food processor for the dough and a manual crank pasta machine for the noodles. Start to finish our pasta is done in less than 15 min and ready to cook!

Another recipe from their cookbook.. Easy, fast and good !

I still had some tomatoes left from a sale and needed to use them up. I found this recipe on Food Network from Michael Chiarello. It's very simple but fresh and flavorful. I'm freezing this for the next recipe that requires a marinara sauce.

I got this copycat recipe from Algy's Recipe Exchange.

    Recipe #64356

From: Maryanne Esposito - Ciao Italia------------ Mushrooms Sauce for pasta is a nice alternative to tomato sauce, and goes especially well with whole wheat fettucine. This is a rich dish, so a little goes a long way. This sauce makes enough for 1 lb. of pasta. For those of you that don't know Maryanne Esposito, let me introduce you to a marvelous cook, who cooks only "Authentic" Italian food, and it is incredible! I had the priviledge of meeting Maryanne at a woman's luncheon many years ago, and she has her own cooking show on Channel 11 in NH. She and her husband, who is a local doctor, live in the next town from where I used to live and work.
