Fresh tomatoes and basil toasted on top of sliced baguettes. Delicious appetizer! This is a little different that some of the other recipes I've seen here because I like my tomato and basil to be warm, so I toast it all together.
A delicious dish that looks fancy but is actually quite easy to make. A good dish for entertaining! Adapted from "The Essential Mediterranean Cookbook" published by Borders. Mussels can be used in place of clams. Make sure your clams aren't too small... you're eating them out of the shell!
This recipe is based upon my recollection of Marlena De Blasi's Tuscan Wild Boar recipe in her book "A Thousand Days in Tuscany." (My copy of that book is currently packed up, so I couldn't consult it.) Also, I made modifications based upon what I had on hand. This is a great dish to serve to a hungry crowd of meat eaters! Please note that prep time does not include time to marinate meat which can vary according to your needs or preferences.
Bold flavor, creamy texture, filling.
Block cheese is preferred, but pre-shredded will work. Fresh parmesan may be substituted for pecorino. Do NOT use the stuff that comes in a cardboard or plastic shaker!
