    This was a 4 week Italian cooking night class I taught. Week 1 We did my Minstrone soup and Foccacia bread menu from the Mediterranean class. Week 2 Flat Bread Pizza A very un-Italian pizza but one you have to try, especially you guys in Australia and New Zealand. Have a look for Mountain Bread in health food stores. I've asked many an Olive Garden waiter for this recipe, but none gave it to me in detail. One waiter told me the secret ingredient was to add a little red wine to the stock, but I'll leave that up to you to try.

    Preparing the vegetables for this stock is so easy that I do it as I'm putting the groceries away. In NZ celery is sold the right way, with all the leaves, so it's too long to go in my veg chiller drawer in the fridge. This stock uses all the top part of the celery, thereby solving a problem and not wasting any good food! It also has the added bonus of making you look like a domestic goddess. It makes about 2.5 litres of stock, which I freeze it small tubs so I always have stock on hand. Prep time is about 3 minutes and the rest is put-your-feet-up cooking time. Couldn't be easier.

    The fastest and most delicious vegetarian pizza you have ever tasted. This is a great favourite with Sure Slim members. We have a flat bread called Mountain Bread in NZ and Australia but any flat bread or even flour tortilla will do.

    This is my grandmother's tiramisu. I have been eating this for as long as I can remember and I have yet to try a tiramisu that I like better. I made this over the weekend and I didn't have kahlua on hand so I used creme de cacao instead and I think I may even prefer it that way now. In the past I have omitted the liqueur and it has still been very good. I have also used part-skim ricotta instead of mascarpone if I'm looking to lower calories and cost. Cook time is chill time for first the coffee and then for the cake itself. Feel free to make this even as early as two days before serving- it will only be better for it.

Because of its high starch content, imported Arborio rice makes the creamiest risotto. If your market doesn't have it, substitute medium- or long-grain white rice.
