The recipe below is a fast simple refreshing tasting side. I hope you try and enjoy this as much as I do. You can add other seasoning, but I find this is perfect for a simple fresh taste, and just goes with everything so well.
I have made this as a main dish for the summer months, when produce is young and tender.
You may add canned tuna, or even sliced chicken breast if desired. Or leave out the feta and have as a side vegetable salad along with hamburgers, or hot sausage grilled to perfection for those summer evening entertaining.
Spinach and strawberries what an odd combination for a recipe. That is what I thought before trying this the first time. Now I get many requests to bring this for dinner parties. The raspberry wine vinegar adds a marvelous taste, and compliments the first two ingredients. This salad is very eye pleasing in crystal.
A nice twist on using cauliflower. We've had this recipe in our family for many years and it's always a nice change from the normal salad. Add or subtract ingredients as you have them on hand without greatly changing the overall recipe. Preparation time does not include time for marinading in refrigerator.
Try this one its very tasty and easy to make. Recipe can be doubled for a very large crowd or occasion. This was one of the last recipes given to me by my friend Marjorie Cottom who died of cancer in the year 2001.
