Inexpensive Meal Ideas That Aren't All Italian or Mexican!

Since we (like most Americans) are on a strict food budget (between $70-$90 a week for a family of 5), I decided to compile a cookbook of some of our go-to favorites which includes, but isn't limited to, Italian and Mexican dishes. We shop at Aldi's, where boneless, skinless chicken is sold for $2.19/lb, ground turkey is $1.69/lb and you can pick up a 2 lb bag of swai fillets (fish) for $3.99. I do frequently substitute frozen or canned items for fresh to pinch a few pennies, and I try to use low-fat or light ingredients whenever possible to save on my waistline. I hope you can find a few recipes that you family can enjoy!

The recipe can easily be multiplied to make as many sandwiches as you need.

This sounds redundant but it is exactly what it is. It is very different but tastes really good. I love spaghetti squash anyway and I truly love pasta. Soooo...... It just makes a differet vegetable to have at suppertime. All you need is a protein and maybe, just maybe, a tossed salad to go along with it. Yum!

Tagliatelle Agli Asparagi E Gorgonzola -- This recipe is a flavor powerhouse made with minimum effort. Cooking asparagus in the pasta pot saves one major step. The Gorgonzola would provide plenty of flavor if tossed in uncooked, but tossing it with the pasta and asparagus mellows its pungency and contributes to a subtle, balanced blend of flavors.

This is my favorite pasta to make for the family.

Easy Chicken meal that is low in fat

    Recipe #302280

Very quick to make, especially if you pound the breasts to about 1/4 inch thickness. If you do this, it should only take 15-20 minutes to bake.

    Recipe #164415

Serve this family favorite with a super-quick salad. Simply pick up prepared salad greens at your local supermarket, toss them with your favorite dressing, and you'll have a meal on the table in a snap! You may use whatever pieces of chicken you desire in this recipe. Anything smaller than breast I'd increase to 2 extra pieces to have same amount of servings. I found this recipe from Ossg Recipes. My family really enjoyed this recipe. When I made this recipe I used 3 chicken breasts which I cut in half. I also used minced garlic in place of the crushed. I used red creamer potatoes which I cut in half. I put my chicken and potatoes in a 9x13 pan and baked them for 35 minutes and my potatoes needed 5 minutes in the microwave.

I found this on the Gooseberry Patch website and I'm posting for safe keeping. It can be found in the "Goosberry Patch: Best-Ever Casseroles" cookbook. It calls for 4 strips of lasagna but I think I may wind up using more. I will update after I make it.

I found this on the Gooseberry Patch website and I'm posting for safe keeping. It can be found in the "Gooseberry Patch: Church Suppers" cookbook. The recipe makes two pies. I added pickles to make it taste a little closer to the real thing.

I found this on Pinterest and it's from the Eat-Clean Diet website. I'm posting for safe keeping and I will update anything I did differently after I make it. The description from the site states: "Satisfy your taste buds and set your metabolism on fire with this delicious recipe! Cayenne, ginger and mustard are three ingredients that help you burn fat just by eating them!"

These are the easiest little things to make and they rival McDonald's chicken selects. I usually increase the spice amounts but I am posting this as it was originally written. I also included the recipe for the homemade honey mustard dipping sauce in the last step. Prep time includes the time needed to let the batter stand. I found this on "The Family Kitchen" site and it was originally posted by ANGIE MCGOWAN.
