This is one of those easy casseroles to make on busy weeknights. The French Fried onions give it such a nice flavor.

I lost this recipe and I found it just this morning, while going through a bunch of old papers. I'm so HAPPY! I'm posting it immediately so it won't get lost again! I got this from a former co-worker, who had it at a potluck and liked it so much she got the recipe, and brought me a copy since she knew how much I loved to cook. I changed it up a bit, making big changes to the dressing and adding a bit to the actual salad components. This is a little on the sweet side, admittedly, but the sugar can be cut back to suit tastes. This is my favourite and I'm so glad I found it!

Most of my books were sold in my garage sale when I moved to an apartment from my house so I wish I could give credit where credit is due, but I can't. I think it may of been from a Ore Ida cook book. Every now and then, I will find 1 or 2 recipes I really enjoy. This was one of them. I did add some cilantro and scallions for a little color, but it is very easy and a wonderful side dish. Serve with some grilled chicken or steak with a Mexican dry rub.

There was once a cafeteria in Texas called Wyatts Cafeteria. DH's family would go there after church on Sunday and his mother would get baked eggplant. For years she tried to copy the recipe and came very close. The original recipe was published in the local paper several years ago. Hope you enjoy it as much as we do.
