Boy, does this bring back memories! When I was in high school, they served this every Friday in the cafeteria. I guess they had to make sure we had our vegetables :) It sounds gross, but I couldn't wait until Fridays, the macaroni and tomatoes were so good together. To this day, almost 20 years later, whenever I have baked macaroni & cheese, I crave stewed tomatoes. With this recipe, I don't have to.

I got this recipe off a box of Mueller's brand elbow macaroni. It is a little time consuming but well worth the effort. It is my favorite macaroni and cheese recipe. I was hesitant to add it to 'zaar because there are already so many mac and cheese recipes but it's really, really good. I hope you try it and like it as much as I do.
I can't stand stringy cheddary mac and cheese. It's got to be creamy - where the sauce sticks to the noodles and every bite is filled with gooey goodness. But I want to make this as healthy as possible. I got this basic recipe from #108068 on Recipezaar but I decided to throw my own flair in there. I made it for my family and I got rave reviews - they had no clue it wasn't "full-octane" with butter, whole milk, and full-fat cheese! This will be one they beg me to make at holidays! You can add ingredients to make it a main dish or just do a basic recipe for a side dish.
Mac and cheese is one of the all-time comfort foods. When my kids' taste finally outgrew the boxed stuff, I came up with this recipe to satisfy their need for cheese (my daughter, in particular, is a cheese junkie). I'm sure this recipe contains influences from my Mother and Grandmother. It goes great with other comfort food staples like meatloaf, roast, pork roast, etc.
From the Houston Chronicle, in response to a reader request. Very basic mac and cheese with mild flavor. When baked, the top gets nice and crunchy. Perfect for OAMC as directions for baking from frozen are included. Also very economical. I usually keep several foil pans of this in my freezer and throw one in the oven when roasting a chicken for a super easy meal. I like extra cheese on top.
