    Texas Homemade BBQ Sauce for Canning or OAMC

    Ok, in TEXAS we do NOT cook with sauce! It is only used as a condiment to top anything we want or to dip things in. There have been so many arguments started over whose is best- but we all know Mama's is best! This makes a bucket load so use the tool to change the number of servings or freeze, can or give away the rest. "Samantha in UK states that this is not safe to can as it has butter in it. I have never had a problem but please be aware of that info. If you are concerned please try substituting with ButterBuds / Molly McButter type butter substitute or do not can. Freezing is another option as well " If you do decide to can this use a Boiling Water Bath, process half-pints and pints for 20 minutes at 0-1000 feet in elevation, 25 minutes for more elevation.

    From Rick Bayless, 'Authentic Mexican.' If you're looking for an authentic Mexican salsa, this is it! It's so simple too! I only use one onion and two jalapenos when I make it, but I decided I'd post the original recipe instead of altering it. The way I make it produces a medium heat. I'd imagine making it his way would produce a hot salsa. I really like it with the lime juice. I haven't made it with the vinegar yet.

    I love this soup. simple but great flavor to start off a Mexican meal. Adjust the hotness to your own likeing. Although the original recipe did not say "cilantro" I believe at least a 1/4 cup of fresh chopped cilntro will really enhance the flavor of this soup.

    I LOVE these things! These enchiladas are bathed in a sauce rich with chili powder, semisweet chocolate and a pinch of cinnamon. Please use corn tortillas and a "white" cheese for the recipe, as this sauce best complements them. Sliced avocado is a particularly tasty garnish for this dish.

    These are the hot carrots like you get in Mexican restaurants. They are positively addictive. I usually make a batch and share with a friend or neighbor. This recipe comes from a restaurant in San Diego called Alta Vista. It was owned and run by a woman named Mary Sargent. Her loyal customers were saddened when she closed her doors and retired, but at least we are able to make these delicious carrots.

    I got this recipe from a friend, who got it from a friend, who got it from a friend,... you get the picture. I like these pickles because they are so easy and very good. You can leave out the peppers if you don't like the "bite". They keep a long time, I've had mine in the extra fridge since last year and I'm just finishing them up. They do have to be stored in the fridge, though. Hope you like them!!

    I was in a wing cook-off and I did come in 2 nd place with this sauce, could of been in 1st but there were not enough ballots for others to vote! The sauce can be made as mild as you want or turn up the heat scale (Scoville Units) by adding more hot peppers. Any type from Jalapeno to Scotch Bonnets. This just might be the best wing sauce for taste. It is mild at the beginning then there is a shot of a little heat!

    Another fine recipe I found in that Family Circle magazine (dang, that was a good issue!). I made this for company and it's easy to do ahead...just make the sauce and bake the ribs up to two days ahead and then refrigerate until you're ready to grill them. Use caution with the Habañero chile, it's pretty hot. I wear plastic gloves, the kind doctors use, and am careful not to touch my face. For the 'spicy brown mustard', I used Koop's Dijon because it's what I had on hand. Use whatever you want. The store I shop at is always having fantastic sales on large packages of country ribs so this was not only tasty to serve to my guests, it was economical as well!

    This Chili is my husband's specialty and is a HUGE event at our house. People and pets start roaming around the kitchen when they see Papa pull out the chopping block and peppers! It's very thick and hearty and the vegetables and peppers add a special flavor that is missing in a lot of chili. Definitely has a little kick to it - but you can serve it to the kids!
