For the fortunate of us, a garden is still a welcome site, providing a bounteous crop of vegetables and fruits annually. Food preservation has permeated every culture in our world at nearly every moment in time. It is this cultural nature of preserved foods which survives today although the focus has shifted from preserving "because we have to" to preserving "because we like to."

    This will bring the tropic to you! Serve it on bread, in a cake glaze a chicken or over cream cheese as a spread. Love to see what you do with it! Will make about 8-10 (8 oz) half pints for gift giving or about 160 servings, 1 Tbsp. each for your own consumption. ;)

    A Beautiful Amber colored jam studded with golden nuggets of spiced peaches. Brown sugar and Southern Comfort giving a nice caramel flavor and warmness from the spices making it great for the holidays. That is if you can save it till then. Top some chicken, pork, toast, pancakes, brie, ice cream or cold vanilla yogurt with this. I didn't peel my peaches but if you desire them peeled just, blanch the peaches in boiling water for 30 seconds, then submerse in an ice bath, then slip off the skins.

    This is actually my friend's mom's recipe. But I have made it three years in a row now and canned hundred's of jars. We usually have a bumper tomato crop and are able to pick green tomatoes from the garden. If they are on the small side use two for each one large tomato listed in the recipe. I usually pick one day and do six batches at once and can them well into the night. Also please note that when you put two or three batches in one large pot sometimes the bottom can burn one trick I use to prevent that is to take a wire coat hanger and bend it into a "V" and put it on top of your element under the pot I know sounds weird but it works! Cooking time does not include canning time.

    This is a sweet and sour condiment. Use it in Chinese cuisine as a dip for deep-fried dishes, such as spring rolls, egg rolls, pork, noodles, and deep-fried tofu as well as for roast duck or chicken. It is made from sweet tart plums along with sugar, vinegar, ginger and chilies.
