This is a favorite salad of mine when I want something that's quick to prepare. If I have some pre-boiled eggs in the refrigerator I can get this on the table in about 5 minutes. (Note: the recipe calls for 3 tablespoons of jarred bacon pieces; however, I usually fry 3 slices of bacon, crumble them and use in place of the jarred bacon. This makes the prep time about 10 minutes longer.)
This makes a delicious, healthy smoothie that is filled with all the vitamins and minerals you need for the day. When I need to make breakfast in a rush this is a recipe I often make -- it's really good, and good for you.
When my son was younger he didn't want to eat spinach, so when I found this recipe I thought he might like it because of the sweetness of the mandarin oranges. Well, he did like it and now eats spinach whatever way I prepare it.
I found this recipe many years ago on the back label of a Hellman's mayo jar stating that it was one of their most popular salads. It's a little twist on the usual Italian bean salad and I make it often during the summer. Preparation time does not include overnight chilling.
