My friend Val shared this recipe with me last year. It is a new favorite, and one that I plan on taking many places over the holiday season, as it is different. Best served with Wheat Thins, this salsa is yummy and a must try! The original recipe called for a 1 pound package of cranberries; I've found that fresh cranberries are now packaged in 12 oz. portions, and this size works. Don't forget to allow time for chilling, to allow flavors to develop...This will make enough for 2 blocks of cream cheese, so you have 1 to serve, and 1 to share!

This recipe is from Secrets of Fat Free Cooking by Sandra Woodruff. Layer turkey, spinach leaves, pepper strips, and artichoke hearts over cream cheese on French bread, and create a memorable appetizer. It is a great dish to take to any gathering. Best if made ahead and allowed to chill for several hours or overnight. I have made it (not so low-fat) using onion and chive flavored cream cheese and I have also made it by adding 1/2 teaspoon of ranch dressing mix to the cream cheese instead of Italian seasoning. You can also use marinated arthichoke instead of canned. Delicious!

Boudro's is a Texas Bistro on the Riverwalk in San Antonio. They wheel out a cart and make this guacamole fresh at your table. It is the best I have ever had. You can skip the roasting of the tomato and peppers if you would like to save time and it still tastes great. I also seem to remember them adding chopped garlic when we were there because I think the waitor joked about it, but it was not listed in the recipe...I always add a couple of cloves.

I find any excuse possible to serve this. Great around the holidays but worthy of being made all year round. It is the dish I am most often asked to bring to a gathering requiring finger foods or appetizers. Really good on Townhouse Wheat Crackers. If I don't have any orange juice concentrate, I use just enough fresh squeezed juice to make it the right consistency and the zest from the orange for more flavor. *PLEASE NOTE!!* You REALLY need to make this ahead of time! The flavors must blend for it to taste good!

Of all my contest submissions, this is the one I'm most proud of. These appetizers are sure to impress your guests. They are a marriage of all kinds of textures and flavours. They are worth the effort and everything can be prepared up to one day in advance. It is even better to prepare the salsa a few hours before, as the flavours will develop. The tortilla chips, stored in an airtight container, will even keep a week or so! If Indian curry paste is not available in your supermarket, you will probably find it in an Asian store. I use the brand Patak's. Korma is a mild and Madras a hot curry paste. All table- and teaspoons are measured levelled, but this is particular important for the curry paste. That's why it is explicitly mentioned.

Here's an easy dip recipe I got from a co-worker - it's a nice change from the usual cheese-based Rotel dip, and always a hit at parties! You can use mild or hot sausage, whatever you prefer.

This Espinaca Dip resembles the one at Jose Peppers, but most people have told me it is much better. You can decide for yourself. This is so easy and doesn't take much time out of your day. It is great for office parties too.

I first had these back in high school - too many years ago to think about now. I've been making them ever since. Now, whenever any of my friends have a get-together, I'm expected to bring them! You've been warned!! They're addictive.

I found this recipe online at Robbie's Recipe collection. She later changed the recipe she had listed, but I like this version much better.
