HEHEH Caught with your hand in the cookie jar!

Cookies are a perfect-sized snack, unless you eat way more than one. Who said that you have to limit yourself to one? NOT me... They are also a great gift for someone who's feeling down and needing a pick-me-up or a hostess gift. Some of these recipes are my favorites and others I can't wait to try!

    Tropical Delight Bar
    Handle

Rich and fruity this three layer bar is sinfully good. A soft cake-like coconut cookie base topped with an apricot and pineapple layer covered with a crumbly coconut crisp topping. Even better using a yellow cake mix makes it easy. (Since the end of RSC on March 20, I have updated the directions a bit to reflect the helpful feedback provided.)

    No No No Cookies

No butter. No sugar. No eggs. The easiest cookies ever! (Don't use the instant type of pudding mix.) As with most of my cookie recipes, the number of cookies it makes is a total guess, depending on how big you make them.

    Crispy Coconut Cookies
    Handle
    30 Reviews |  By Gerry

This recipe was passed along to me a number years ago when I made mention I was looking for new recipes to add to my collection for Christmas baking. This excellent crispy cookie is not only great at Christmas, it's one of those simple delights great to serve for any occasion ... one of those 'looks simple but you can't just eat one' kind of cookie. I suspect the cream of tartar makes for a crispy light cookie. NOTE: any fine coconut can be used when making these cookies, do not substitute with medium or coarse coconut, they just do not work for these cookies. Fine coconut is readily available in the baking section of most stores.

    White Chocolate Macadamia Nut Cookies
    Handle

I got this recipe from the 30-day gourmet newsletter. I've already tried it and thought it was a great tasting cookie. They recommend real butter in this recipe but stated that half margarine and half butter flavored Crisco was an acceptable substitute. Macadamia nuts are expensive so I may try to substitute with another nut like English walnuts the next time I make this.

This is good!!! I tasted it at a party and was so surprised to learn that the base of the cookie was a saltine cracker. I haven't made this myself, but plan to do so in the near future. Just thought I would submit it because it is so different.
