Healthy Recipes - Low Cal/Low Fat

Recipes that are relatively healthy. Many low cal/low fat. No recipes go into this cookbook unless they are low fat/cal or I think I can adapt them to contain less fat or calories.

I found this recipe while looking for low calorie meals. I must say this was the best "pizza" I ever had!! Can be used as an appetizer or snack. I use it in my low calorie diet as a dinner.

    Recipe #135660

My dietitian gave me the recipe during one of my counseling sessions. I told her it was deeelish. Their dietary dept. is really good about working with what you can/can't and will/won't eat for your special diet. Even though they are a hospital, the food there is surprisingly good.

Lovers of Brussel sprouts will greatly enjoy this dish. Partially cooked sprouts tossed in the glaze give them a tangy-sweet taste.

    Recipe #149074

I don't know where I go this recipe, but it has a very interesting mix of flavors that come together for great chicken. I usually double the the marinade and set half aside before I marinate the chicken. I cook the marinade I set aside at a low boil until reduced and has a syrupy consistency, stirring often. Baste chicken while it is grilling three or four times. I did not include marinating time in the prep time.

This was one of my favorite recipes when I was in Weight Watchers. My teenage son also likes this very much and frequently still requests that I make it. I am posting it because I do not want to lose this recipe, and it had been misplaced for a few months and just found again today. This recipe is written for 1 person, but ingredients can be increased as needed.

These are so tasty. Points 1.

A different way to make Perfect Rice in the microwave. I didn't believe that it would cook till tender without being covered, boy was I wrong. From cookbook author Kathleen Daelemans.

Dress up that ordinary grilled chicken to create an exotic Mediterranean meal that will excite your family and friends. These 4 marinades will transform your menu into an international culinary delight. Whether you use whole butterflied poussins, game hens, broiler halves, chicken parts or boneless chicken cubes on skewers, you will find the following marinades intensely flavorful. Marinate the meat overnight in the refrigerator and bring to room temperature before cooking. If you like, thread blanched vegetables such as sweet pepper and onion chunks, onto skewers and cook alongside the chicken (or thread them on the same skewers). Serve the chicken with fresh lemon wedges and a traditional side dish or salad with bread or pitas and watch it disappear. Cooking times vary.I have been told the Egyptian marinade is especially good on whole butterflied squab (pigeon). I adjusted the amount of lemon juice in the Lebanese marinade if you love lemon, go for the 1/2 a cup.... if lemon is just "okay" stick with the 1/4 cup.

I collect veggie burger recipes and this is a little different from the others I have. Feel free to use other veggies. if you like! These can be frozen. Serving suggestions: Serve with grilled onions, grilled portabella mushroom slices, and mixed greens, or, burger style with ketchup

    Recipe #62569

A recent trip to Cocso and I'm now the proud owner of a large stockpile of black beans. That has sent me combing my cookbooks for meal options using this healthful and versatile ingredients. Keeping what I find here for quick and easy access until I have a chance to try them. The original recipe for these delectable cakes included a tablespoon of chorizo, though I intend to make them vegetarian. These can also easily be made vegan with the use of a little soy yogurt. Serve these as a substantial appetizer or along with a lovely green salad as a light meal or lunch. With the chorizo, these are 3 points per serving. The recipe can easily be modified to be Core. The cakes also freeze well for reheating later.
