    A little dish I created a couple of years back. Extremely healthy. The fish turns out really moist, and the juice is out of this world. I usually add a little more garlic, but I am CRAZY about garlic. Has become such a staple with my family that it is requested for at least once a month. Don't worry about adding any salt, I personally feel that it isn't needed. The herbs and juices mixed together makes it all natural and tasty enough. But if you feel some salt is lacking, just sprinkle a little before digging in. ENJOY!

    With DH being a diabetic, I am always looking for ways to add veggies into the diet. I found a recipe on the web and did some adjusting to suit our taste. The recipe calls for ground turkey; however, extra-lean ground beef also works well. Top with Creole Sauce recipe #149159 for a fabulous main course! These can be frozen, defrosted in the refrigerator and warmed as needed making this a great recipe for small families or when preparing a meal for one.

    A departure from typical leftover turkey dishes, this high-fiber burrito bake gives us our Tex-Mex fix without too much fat. You can also use a 10-tortilla package and reduce turkey by 1/2 cup to make 5 servings. I created this version as part of a high-fiber regimen to lower cholesterol.

    I don't know where I go this recipe, but it has a very interesting mix of flavors that come together for great chicken. I usually double the the marinade and set half aside before I marinate the chicken. I cook the marinade I set aside at a low boil until reduced and has a syrupy consistency, stirring often. Baste chicken while it is grilling three or four times. I did not include marinating time in the prep time.

    Not what I usually find for Spanish/Mexican food. These enchiladas have become a family treat. They're really rich, and taste even better as leftovers. The extra prep time is worth every second to get a dish this impressive that tastes so great. Because everything is pre-cooked, you can save prepared dish in fridge and oven it later. My sister was so proud to make them herself, she took them into her high school Spanish class!     There are a lot of chicken casseroles out there but this is the best I've ever had. My kids love it too. Freezes well (let thaw and then bake) and works well for a covered dish meal. I like to serve it with cranberry sauce on the side. And as a reviewer suggested, I have heard of people adding chilies to this recipe. I usually broil my chicken. The results are much tenderer than boiling it. Thigh meat can also be used if you prefer.

    This was something that my mother use to make & was all ways my favorite, so I had to learn how to make them myself. I add more garlic to the ground beef & have them with mash potatoes. Never had anyone say they didn't like them. Also, make great grinders with the soup!
