This recipe comes from Alton Brown and it's the only way we have rice anymore. My servings are quite a bit smaller than his, though! You can use chicken or veggie broth in place of the water, or add herbs and spices.
Purple Hull Peas are a lot like black eyed peas. We buy ours fresh and already shelled from a roadside farm stand in East Texas. We keep them in a cooler for our four hour trip back home. I put them in the fridge and make this ASAP usually the next day. I got this recipe from purplehull.com. but I use half the sugar and half the salt that the original had. We love the healthier version and hope you will too.
The advantage to using honey instead of sugar in granola is that you need significantly less. This is a good recipe as is, but please feel free to experiment with coconut, sesame seeds, sunflower seeds, powdered milk or additional oil or honey for a richer taste. I love all kinds of kale. The article from The Washington Post mentions black kale (aka - dino, Tuscan kale) as a nice choice but I suspect curly blue-green Scotch kale would be fine as well. Oh, did I mention how incredibly nutritious & economical kale is? Or how unbelievably easy kale is to grow in anyone's garden.... even in the winter?

From the NY Times. Eating this was the first time I'd had kale, and it was simply delicious!! The only change I had made from the original recipe is that I added lemon zest and it turned out even better! For the bread crumbs, coarsely crushed homemade croutons would work also. Instead of bread crumbs, you can use a nice thin slice of toasted country bread. Zaar wouldn't let me enter the word crusty/chewy country bread into the ingredient list. If you have a microplane, that works good for grating the garlic instead of finely chopping it.
Beets tops are a very mild tasting and lend themselves to many combinations of yummy foods. They cook up quickly and will be a great addition to your menu. I got my inspiration from Recipezaar and added some extras! Enjoy!
This may sound gross (its made with prune baby food) but believe me, you'll be surprised at how good they are. I like these better then normal brownies and these are healthy and the prune really keeps them moist and chewy. Best brownies ever!
These are not my favorite vegetable but when I see them fresh I can't resist buying some. I like garlic with them and added onions. The Pine nuts are optional. You may like to sprinkle on some Parmesan cheese . Clean them well before using in cold water. I like my veggies still crisp so I suggest 5 minutes steaming but if you like your veggies soft the steam for 12 minutes. Fiddleheads are very healthy loaded with Iron.
