    30 years ago my ex invited a couple over for a BBQ. It was actually to teach me to make authentic tamales. t was one of the good things he had done--ok,probably the only good thing! LOL Time is very difficult to judge. I do the crock pot prep over night, so cooking time is steaming time.

    This is a long one. The first part of this is for cooking the meat that will go into the tamales. Of course you can use whatever meat you want, I always have this roast as a left-over in my fridge so this is the perfect use for it. There are many ways to wrap and cook tamales, this is just one. I use canned black beans and have never tried dried ones. The Masa Harina you you should be Maseca, the Instant Corn Masa Mix and not Masa Flour.

    My guacamole is very free-form, but here are the basics: Figure about 1/2 large avocado per person. I don't care whether I'm using Haas or regular avocados - some people do. Pick ones that give to mild pressure but are not mushy. If you can't find any that are ripe, get hard ones and keep them in a paper bag for a couple of days until they ripen.

    Another one of my no-flame-required, kid-friendly recipes. I remember making these in my after school program in grade school and loving them. They are a great wholesome activity for kids parties...just make sure an adult slices the apples. My favorite Apples to use are Pink Lady because the tart flavor is a nice compliment to the Peanut Butter. For a healthier variation, use cubed Slightly Green Bananas instead of Marshmallows...ripe bananas may be mushy. If you are worried about Peanut Butter allergies, substitute Cashew Nut butter as it is far less common to be allergic to.

    A Halloween favorite (young and old) for parties. Frothy lemon-lime punch with a spooky floater. Originaly from (Family Circle?) "Halloween Tricks & Treats 2000" magazine. I have successfully packed this punch in a cooler and sent it to school for my 4th grader to assemble at party time. Not a drop is ever left.
