    Guacamole, faux (lower-fat) guac, and the like... Avocados are the "good" kind of fat, omegas and all that goodness! I love good quality guacamole with warm homemade pita chips!

    I could eat tons of this, and I do. You can also use canned asparagus, but this is amazing with the fresh (and yes, more expensive) stuff.

    This recipe was originally submitted by Mean Chef (IHHDRO). I adopted it after he left the site. The text from my original review stated, "Excellent guacamole! I didn't have any serrano peppers on hand and subbed a some finely diced jalapenos. The flavor of this was so fresh and wonderful. I love avocados and this was guac at its best." I go through phases of craving guacamole and have tried other recipes, but always come back to this one.

    I am surprised how difficult it is to find a genuine guacamole recipe. No need for mayo or sour cream or all the other additives. This is the original, handed down generations, yet the most simple basic way to make Guacamole. I even make it better than my Mother in Law, which is a hard act to follow. :) Make this recipe and you will never go back. Hope you enjoy this like all my friends and family do.

    I got this recipe off of the Food Network website. It was on the Good Eats episode, Dip Madness. I adjusted the directions a little bit from the original recipe. I also didn't add the cayenne that it called for and insted added some red pepper flakes. Number of servings is approximate. Cooking time is setting time (to let the flavors fully develop).

    Avocado pits unite!! Save this guacamole/avocado dip from turning black or brown!! The pit/seed of an avocado prevents guacamole/avocado dip from turning brown or black. It keeps it green, even after a day. This dip does not have any tomatoes in it. My mom made it this way when we kids were growing up. It is simple to make and very tasty. For a spicier, hotter dip, use jalapeños or serrano chilies instead of green chilies. The full flavor of the avocado comes through because there are not a lot of ingredients to mask its true flavor. This can be served as a side dish on a leaf of lettuce. You can also put a scoop of it on top of enchiladas or burritos. Larger avocados can be used but you will need to add more of the other ingredients as well. Preparation time is approximate.

    I recently visited my brother and sister-in-law. She is a fabulous cook who learned from her mother growing up in Mexico City. She doesn't cook from recipes, but from memory and experience of how she was taught. We had a fabulous meal of beef tacos with this guacamole. I watched so I could make it at home. It's different than most because of the tomatillos, and it's wonderful with the beef. I posted the beef taco recipe separately.

    While shopping this summer, my daugter came to me with a package of marked down avocados. "Can we make Guacamole, Please?" Explaining that I did not have a recipe, she said not to worry, she made it once at her friend's house. Since my girlfriend and her husband were coming up the next day, and she knew how to make it I said fine and we picked them up. This is what we ended up with. We have made it a couple of times since and it always vanished pretty quick. It is great for the cottage or camping as it requires no more equipment that a bowl, spoon and knife. The flavours might blend together more if you chill it before serving, but they are usually digging into it while I am still making it.
