    Ground Beef (Mince) Recipes

I have to admit to being spoiled by good, Canadian, corn-fed beef...unfortunately, I gave that beef up 20 years ago when I moved to Greece and have not had a decent steak since! I still cook with red meat because two of my kids have an iron deficiency, and it is the easiest way to get more iron into their diet but, these days, the red meat content is supplied by ground beef, which I have the butcher grind to order. These are some of our favourite recipes and others I have picked up along the way...

I originally found this taco casserole recipe in a Taste of Home magazine. Since then, I have made this recipe at least 50 times. I love it because the ingredients list isn't complicated and, based on the layers, I can readily remember all ingredients when I am at the store without my recipe card. I have served this for myself and had wonderful leftovers or many times I have made it for company with a nice green salad to accompany it. I hope you enjoy it as much as I do.

    Recipe #155186

I use chili sauce or salsa instead of ketchup to give a nice contrast to the sweetness of the brown sugar. A lighter version can be made using Splenda brown sugar blend, skim milk, and Egg Beaters. Got this one from the AllRecipes website. It's one of their most popular recipes.

    Recipe #38641

My family enjoyed the slightly spicy taste of this meatloaf. This recipe, submitted by a local DJ, was in our local paper.

This is almost like a lasagna. Very good!

    Recipe #21363

This sauce can be used with beef or cheese enchiladas. The amount of "heat" in the sauce depends on the type and amount of chili powder you use.

This is a version of the famous Wendy's chili and it tastes just like it! This recipe is from Todd Wilbur's book Top Secret Recipes. www.TopSecretRecipes.com

    Recipe #17858

This is a recipe I got from my father who got it from a little old lady he knew from Italy. I always simmer this sauce with my meatballs (recipe posted). You can also add sausage if you like. This sauce is to die for!!!!

    Recipe #92096

Meatball recipes are often challenged by chefs who claim, "Mine are the best!" Even though my meatballs ARE the best, I will make no such claim. Try them for yourself! This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

This recipe is so wonderful I had to share with everyone! Spicy and delicious - it's like a Mexican Lasagna! Makes a lot of servings and would be great for those Cinco de Mayo parties! From allrecipes.com and Kathi McClaren.

This is an easy, yet very tasty spaghetti casserole, which reminds me of the spaghetti they used to serve us in elementary school. I loved their spaghetti! I normally only brought my lunch, but not on spaghetti day!

    Recipe #87085

Three words-- OH MY GOSH!!!! This is a recipe from Adriana's restaurant on The Hill in St. Louis, one of the greatest Italian neighborhoods in the country. This pie is so good it will leave you wanting more, even when you're full. It makes a LOT of extra sauce for you to save and use as you wish. I also make this ahead by only baking it for 15 minutes at first, then freezing it and baking it for an hour at a later time. Can you say "meat crust?" You will from now on... p.s. a reviewer says the recipe also appears on foodtv.com with slight variations.

A spin off of the Mexican Tamale! Great for POT LUCK! Serve with a salad a side of sour cream and guacamole and you have a nice meal. A lot easier then stuffing corn husks. DON'T FORGET THE MARGARITAS OR A TALL COLD BEER!
