These are savory pancakes and my favorite way to eat summer squash. I could eat a whole batch myself.

    Recipe #381522

This is a free form tart - no tart pan necessary! It's easy, delicious, and really looks great. You can use puff pastry or a pie crust for this.

    Recipe #480890

This recipe will serve about 3 people, I most always double all amounts and cook for 11-12 minutes --- give this a try using fresh cooked corn off the cob or well drained canned corn niblets may also be used :)

    Recipe #84665

A simple baked dish of sliced eggplant, tomatoes, and onion that is so delicious! From Melissa D'Arabian. I did sprinkle some dried herbs (herbs de provance) over the vegetables before baking.

This is a very healthy recipe - found on a Hospital Diet Guide for a Heart healthy diet and to lose weight - however, one would not expect these to be sooooo good!!! My husband who loves steak but isn't so much into mushrooms, went crazy over these - I served them with Black & Blue Steak Burgers (no bread) and a salad, all were grilled outdoors and really a fantastic meal!

    Recipe #151066

I've had several people tell me these are the best stuffed mushrooms they've ever had! (In fact, every few months, a friend of mine tells me: "My mom was talking about your mushrooms again today...she sure loves them." Her mom tried them once at a New Year's Eve party about three years ago LOL) These are similar to Olive Garden's, but not nearly as greasy and more flavorful!! Once I tried subbing canned crab for the clams but was NOT impressed...the crab version was so bland! Even if someone doesn't like clams or seafood, I think they'll like this doesn't taste seafood-y at all, but the clams add an element that will be missed. I hope you enjoy 'em! :-)

    Recipe #402227

Roast jalapeno peppers stuffed with cream cheese and wrapped in bacon. These are a little time consuming, but the results are delicious. Prep time includes time to grill the peppers. You can let your imagination go wild and adjust the recipe by adding anything you think sounds good. Cream cheese measurement is an estimate because of the difference in pepper sizes. Thanks to Chuck who makes these and takes them to all the neighborhood cookouts and potlucks. He often goes home with requests for more.

    Recipe #287545

The flavor of the peppers come through, but the cheese and bacon put some of the fire out. I believe the "tenderfoot" would even like these. I have even frozen these with good success.

I'm posting this recipe for eggplant and or zucchini. No need to peel the zucchini. I've also done both in one recipe. You can also just oven bake the eggplant and dip into sauce for appetizers. My husband and I just love it! Especially when the eggplant and zucchini is home grown! No buttermilk no problem just place 1 teaspoon lemon juice or vinegar in a 1 cup glass then top with milk let sit while gathering the rest of the ingredients.

I have been an abismal failure at making stuffed mushrooms. Even following recipes to the tee! Well, I finally decided to branch out on my own and as the first bite generated a "Wow!" I figured I should share!

    Recipe #113308

If you love tomatoes like I do, then you may enjoy this recipe. It's a quick side dish/plate filler that doesn't have too many ingredients, it's healthy and tastes nice. Original recipe calls for Roma and Plum tomatoes but I use what is in season. This recipe comes from a book called "Purely Golden Door" by The Golden Door Health Retreats.

    Recipe #279369

I LOVE going to the Outback and ordering this side with my steak. I could eat these alone! This is a copycat recipe; one I have had saved but have yet to try. But if this recipe is a true copycat of what I have eaten at Outback, you will not be sorry!

    Recipe #36869

A quick and easy recipe to prepare. Can be used as a side dish or salsa.

We love avocado and quacamole and this is a quick and easy way to have it..... Robin Miller had this on her show and it is wonderful..... We fixed this as a quacamole and smashed the avocados them mixed in the lime juice and cilantro.... You could prepare it either way....

    Recipe #312012

These can be served warm or at room an appetizer or as a main dish. Recipe source: Chicago Tribune Magazine. NOTE: the original recipe states to use EITHER 20 baby or 10 medium or 5 large artichokes. I couldn't get that past the editor.

    Recipe #173028

An easy and light side dish from Kraft that works on the grill or in the oven, if you wish. You can also use a balsamic dressing instead of zesty Italian.

Perfect grilled corn inside the husk that's great around the campfire! Below are also oven baking instructions.

    Recipe #260530

This is excellent over pasta or cous cous. Go easy on the cinnamon and heavy on the mushrooms. Serve warm or cold.
