I found this recipe on Kathie Lee Gifford's website, and I'm listing this because it's a bit different than the recipes posted. I was looking for a different holiday cheeseball, and this one hit the spot. Instead of serving this with chocolate graham crackers, I used graham cracker sticks.
If you like Chinese dumplings, these vegetarian pot stickers will blow your mind!! They are very easy to make (contrary to what people may think) and dumpling skins are available even in Western supermarket now. This recipe should use up one package of round dumpling skin and enough to serve a big crowd as appetizers. You can make these dumplings way ahead of time and defrost and pan-fry them just before serving. A recipe by Ming Tsai.
“A more substantial egg salad to serve as a light summer brunch.” I chose this for the Cookbook Swap Cookbook. It sounds so delicious. I can’t wait to make this one Sunday morning for a nice light brunch. I love this cookbook; it is Anne Willan’s The Good Cook. I might just have to go get a copy for my self :) .
I found a tasty chipotle dip at my local store but they discontinued it. This recipe is very close to what I used to buy and I actually like it more. Very spicy if prepared according to the recipe so beware.
This recipe comes from my long time friend, Tracy. I really can not believe she shared it with me.....all this time, I thought she cast some magic spell over the frying pan to make them taste so good! Turns out it was just the saltine crackers! The mystery is over......
Do keep in mind, that this is NOT a "batter" recipe (if you love breading, you may want to try something else). The coating is light and crispy and you end up with more coverage on the 'interior' part of the pepper than the exterior. I think they are wonderful this way!

My sister Evelyn (Ebby) taught me how to make them several years ago.
Don't bother ordering Chinese chicken balls make these at home they are just as good if not even better and the sweet and sour sauce is the same as what is served at your Chinese restaurant!-- these are a great weekend snack or can be served as appetizers, if you want some extra flavor to you chicken batter feel free to add in some garlic or onion powder or spices of choice --- this makes a large amount so you may want to reduce the chicken ball batter amount by half (using 4 chicken breasts) --- NOTE: the sauce recipe is one you may have to make a few times before you get the consistancy and sweetness to your liking, 1 cup white sugar and 1/2 cup lightly packed brown will give you a sweet sauce you may reduce the white sugar amount by a few tablespoons
This is fresh and crunchy. Almost all the ingredients come straight from the garden. A great use for those surplus cucumbers and tomatoes-you can only make so many pickles, right?! Cook time is chill time.
I accidentally ate one of these thinking it was stuffed with a green olive because I wouldn't have touched "pickled okra" with a ten foot pole! Now i'm hooked on the stuff! This is a quick and easy finger food. The taste is awesome! Please let me know how you like it!!!!!!!!!
