    Gluten-free version of a childhood favorite. If you can get gluten-free oats go ahead and use them instead of the quinoa flakes if you prefer. I am just guessing at the servings, you can make the cookies as large or small as you like, the number you get depends on the size you make.

    I learned to make these from my friend Adrián Marchena while I spent a semester of college in Puntarenas, Costa Rica. I have not personally made these, but I stood next to him in his kitchen as he gave me step-by-step instructions. These are sweet, and almost dessert-like. You can find plantains in most local supermarkets in the produce section, and they look like bananas, but are more of a vegetable. They are quite frequently eaten by Costa Ricans, or "ticos" with meals that include gallo pinto (rice and black beans) and some meat product. I LOVE these!

    These are very easy and quick to make especially using bought frozen pre rolled puff pastry sheets and canned pear or peach halves. They make for a light dessert. Also fun for children to help make and then watch puff up while cooking.

    Our own Auberge de la Fontaine Lavender Pancakes - these are made with home-grown organic lavender flowers from our garden here in SW France, where we often serve them for breakfast! They also make a very elegant dessert when served with cream and fruit - I sometimes serve them with Recipe #241775.     This is like spicy sunshine when used as a spread on a hamburger or in a wrap. The tartness from the lime is a contrast with the sweetness of the dried fruit. It is important to allow the full soaking time for the apricots. From Southern Living magazine.
