    Had some leftover BBQ sauce and some left over chicken, but not much of either so I made pizza. Don't overcook the bacon before you put it on the pizza since it will cook in the oven, too. Use your favorite BBQ sauce but go easy on it...a little goes a long way. Adjust the amount to the thickness of your crust. I use about a third of a cup for a thin crust, use more for thick.

    This is a great use of leftover rice. It's important to use Thai sweet basil to get the authentic Thai restaurant taste. And don't skip the fish sauce, it smells strong in the bottle, but it blends in nicely with the other ingredients when it's all put together. Also, make sure you use chilled rice, or you'll end up with mush.

    After looking on the internet for days for a Chick-Fil-A copycat and finding only plain old fried chicken recipes, I decided to try and imitate it myself. It came out pretty darn close I think! There are two crucial ingredients chick-fil-a uses that most recipes dont have- pickle juice and sugar. They also use MSG- but its also ok without it if you dont like it. Just cut up the breasts into chunks and follow recipe for nuggets. (Edit: I also have to say I love Chick- Fil-A and that I think they're a great company. I encourage anyone to visit if they can, the staff is always so nice and polite at every location I've been to! Its just too bad they don't have more locations!)

    I bought some marinated feta at Eumundie Markets recently, and was VERY impressed, so I did what all cooks do, I copied it :) This is the basic recipe, you can add Parmesan cheese, toasted pine nuts, or even chopped olives. you can use any pesto for this, I have tried it with sundried tomato pesto, and it was good, but I prefer the fresh taste of the basil pesto:) this will keep well in the fridge, and the flavours meld better if made the day before its needed. I have made this with soft greek feta, but I have to say I prefer the aussie feta, as it holds its' shape so much better. If there are any leftovers, you can use it as a base for Greek pizza...yummy

    This is the best salsa recipe I've found so far and I've tried about a dozen. I got it from one of the local hospital cookbooks that are sold in my area. I changed it a bit and have been canning it for years. The reason I plant a garden is for this salsa. We would be lost without it. Hope you like it as much as we do. One of our members who is a food scientist took this salsa to work, tested the pH and found it measured under 4.0 (well within the safety limit for boiling water bath processing).

    I have been making this for years, as it is quick and is a complete meal in one dish. I am posting my basic recipe but, if you'd rather have tomato sauce than gravy, try that instead. If you'd like, you can sprinkle about 1/2 cup of your favorite cheese over the potatoes before sprinkling with paprika. And you can also use two 16-oz. bags of frozen mixed vegetables instead of the corn, carrots, and peas, or any leftover vegetables you may have. This is really an incredibly versatile recipe! I would also suggest you check the seasoning before adding the cooked mixture to the baking dish. Both the onion soup mix and gravy have sodium, so taste it before adding salt. If you don't have leftover mashed potatoes, instant potatoes will work fine.
