I made this up tonight...I was thinking buttery cinnamon nutty oatmeal cookie...it turned out such a pretty light pink that I had to honor one of my favorite '80's movies with the title. Hope you like it! **You might want to start with just a dash of Aftershock because it can be overpowering**
This is great on fish--specially swordfish and salmon. It would probably be good with chicken too. It's smooth, creamy and lemony. I have this posted with my Recipe #202691. but some people might want to use it with another fish or chicken recipe so I'm posting it on it's own. Prep time does not include refrigeration time.
I whipped this up after my husband decided to try peanut butter and sour cream together on a spoon. He liked it so much he came to me and asked, "Are there any recipes that use peanut butter and sour cream together?" This is similar to some refrigerated pie fillings but I made it sugar free. I also didn't find any recipes that used cream cheese/neufchatel, cool whip AND sour cream together. It turned out great. Use as a pudding topped with fresh fruit or as a dip for fresh fruit.
Got this off the internet. Turned out to have a very nice flavor and was beautiful. I also enjoyed the textures together. Be sure to use the firm, flat, non-astringent "Fuyu" persimmon NOT the squishy dry out your mouth kind.
This was inspired by Chef Potpie's recipe#197754. I went to make it and thought it was missing tomatoes...I realized I had some sundried tomatoes and other flavorful add-ins and came up with this. It turned out very yummy. I love the tangy additions with the salami. To me this is a meal in itself! You could add onion to this also if you like. I might even try it with some capers next time. Hmm...and perhaps feta cheese instead of mozzarella with shredded chicken or no meat for greek potatoes! It's so fun to experiment. This could also be made in the oven or with leftover roasted potatoes or canned potatoes. Enjoy!
