    Growing up on the Alabama Gulf Coast, my Wife has a true affinity for seafood. Not only does She love it, but She is a Sea Goddess in the kitchen. Needless to say, She's made a believer out of me. :D These recipes are tried and true treasures from the sea, from a Bayou Gal. This cookbook also features fish recipes, some from far away.

    Preparation is simple but looks great when served. This is typically an elegant Spring dish. The vegetables used are yellow summer squash, zucchini, sliced carrots, broccoli, and cauliflower. A fresh green salad would work as a topping, as well. But the real factor here is the TASTE. You can use any type of fish with this recipe, as well. We have made this with flounder, bass, and trout, as well. It's YUMMY! And don't worry, if you don't like sour cream. You can't even taste it once it's all done. [Heavily adapted from bon appetit.]

    This recipe is from My mother's very own "Tried and True" recipe book. It's the absolute best gumbo recipe I've ever tasted. I've never had gumbo in any restaurant which could compare with this one. She got it from My "Aunt" Corrita in New Orleans. Also, it's perfect when working a water spell. Be sure to dish up a bowl for the Gods when you use this.

    This is a huge favorite at my house. There are never any left overs, and this is one of those meals which calls the family members home on nights when it's served. This goes wonderfully with cheese biscuits. This was requested (kinda) by another member. Cooking time is long to accomodate the mincing of the vegetables/spices. This is also wonderful with fish! And a natural with chicken. If you want to try this with chicken, increase the rosemary to 1 full teaspoon and definitely add the garlic!

    I saw this recipe made on 30 Minute Meals. These shrimp and scallops in the light tomato broth are delicious. I've even made this without the saffron (with a touch more garlic and spice) and it was still full of flavor. I substitute vegetable broth for the chicken, but feel free to add it back if you prefer.
