    Being from southern Spain myself I am always taken aback a little when I see recipes for Gazpacho that ask you to use tomato juice, parsley, sometimes cilantro, hot sauce, etc. I would like to share with you the simple, authentic, centuries old recipe for this fantastic, super healthy, flavorful dish. The one variation that is widely accepted to this recipe is the use of blenders versus the mortar and pestle of yesteryear. I hope you enjoy. Cook's note: I subscribe to South Beach Diet regime so I omit the bread but feel free to add a few ounces to yours if you like

    This is my grandma's recipe, and one of my all-time favorites. It has such a wonderful flavor--which you really can't guess by looking at the deceptively simple list of ingredients. I have enjoyed serving this at summer tea parties, because it's light and savory, a good complement to scones, fruit salad, and perhaps cheese and fresh vegetables. But it's great for any meal.

    The garlic is the star of this creamy soup. Which adapts well to vegetarian diets by using vegetable stock in place of chicken stock. Saw a spinach soup recipe in magazine some time back and then lost it. Made this the other night which am sure is close to what I read.

    This is my response to craving mexican food but not being able to have the calories. This soup is very filling and low points- 6 1/2 for the whole recipe. You can control the heat of this recipe by the type of salsa you add- I usually use mild. Whatever heat you choose, it should be fresh salsa so the cilantro and other flavours are strong enough. If you really like it hot, add some chillies! I like to chop the ingredients fairly small for this recipe so you get an even flavour balance in every bite.

    You have these ingredients already. So save yourself a trip to the store, some money, and some sodium. Here's a flavorful condensed cream of chicken soup base recipe for use in dishes that call for canned creamed soups. Use instead of condensed canned cream soups in recipes. Just add the ingredient that forms the basis of the soup. Chop mushrooms, sauté in a bit of olive oil and add for cream of mushroom soup. Add chicken for cream of chicken soup. Chop & sauté celery for, you guessed it, cream of celery. (As found at tammysrecipes.com/homemade_cream_chicken_soup ) Yields 3 cups -- about 2 (10.5 oz) cans of condensed cream of 'whatever'.

    This is one of Jamie Oliver's recipes. It is delicious! My whole family loves this, even my 8 year old..and he doesn't usually eat soup at all!! I totally recommend adding the bacon as a garnish, it really finishes it off!

    I made this soup without a lot of things other cream soups call for for health reasons. In this recipe the vegetables come out thick enough that no flour is needed or heavy creams. If your broth is salted there is no need to add more salt. The flavors of the vegetables come through and is amazing. If I wasn't watching my calories and portions, I could have ate the whole pot.
