    I made this soup without a lot of things other cream soups call for for health reasons. In this recipe the vegetables come out thick enough that no flour is needed or heavy creams. If your broth is salted there is no need to add more salt. The flavors of the vegetables come through and is amazing. If I wasn't watching my calories and portions, I could have ate the whole pot.

    Being from southern Spain myself I am always taken aback a little when I see recipes for Gazpacho that ask you to use tomato juice, parsley, sometimes cilantro, hot sauce, etc. I would like to share with you the simple, authentic, centuries old recipe for this fantastic, super healthy, flavorful dish. The one variation that is widely accepted to this recipe is the use of blenders versus the mortar and pestle of yesteryear. I hope you enjoy. Cook's note: I subscribe to South Beach Diet regime so I omit the bread but feel free to add a few ounces to yours if you like

    Simple and elegant, this is a soup to be enjoyed by avocado lovers and even those who may consider this delicious vegetable "fruit of soap" instead of "fruit of butter". It is perfect with a Mexican meal, or on other occasions for that matter. I haven't tried it chilled, but why not. If chilled, I would change the garnish to chopped tomatoes.

    I found this on the TOH site and it has quickly become a favorite of my family's. Add a salad and a warm loaf of sourdough and it's perfect comfort food! I generally make the roux and then throw everything in my crockpot to simmer for a couple of hours. I use a cup of the buffalo sauce and 8 oz of Velvetta and it turns out just right for us.

    My first recipe posting! :) This is my favorite soup to make when the weather starts to get chilly. It's from a little restaurant in the small town where I grew up. My mom obtained the recipe, and I have fond memories of helping her make this soup. It's great served with shredded cheese, and freezes really well too. Prep time, cook time and servings are all approximate. Enjoy!

    One of the trendiest soups over here in the UK at the moment is carrot and coriander soup. Coriander is the same thing as cilantro only by a different name. I have enjoyed this soup but because of my dietary requirements have avoided it because creamy soups like this so often use a lot of cream. So, I was happy to find this version of the soup in the August 2008 copy of BBC Good Magazine because it doesn't use any dairy at all. I have now tried the recipe and think it is fantastic. It is very rich and creamy tasting without any at all.

    This is one of Jamie Oliver's recipes. It is delicious! My whole family loves this, even my 8 year old..and he doesn't usually eat soup at all!! I totally recommend adding the bacon as a garnish, it really finishes it off!

    I received a pamphlet from Kitchen Basics Stock called Healthy Cooking with Stock at the Taste of Home Cooking School recently. I hope to try this recipe soon as the weather gets cooler.     I wanted a wild rice soup that was bold and warming and not creamy. This is what it came out to be and we enjoyed it a lot. I actually used a little garlic and onion powder, cayenne, oregano and paprika instead of creole seasoning because I didn't have any, but that is what it is. I use trader joes wild rice/basmati mix. cooked it first in stock and added about 1 1/2 cups
