My mom makes this recipe on Christmas eve so that we have a wonderful breakfast baking in the oven while we open up Christmas presents in the morning. I absolutely love this casserole! We use the Pepperidge Farm seasoned bread cubes that are readily available during the holidays.
I got this recipe form Cokingvilage.com they used plain white mashed potatoes; I thought that it needed to be pink. The family had a hard time because there brain was saying cake but the mouth was saying meatloaf and mashed potatoes. This was a lot of fun for April fool’s Day
Fast, tasty, and easy is the name of the game with this dish. Put this on your table very quickly for a hearty pleasing meal in one dish. This is also great for potlucks and when hubby has to prepare the meal.
These mashed potatoes are made extra yummy by adding garlic and mozzarella and Parmesan cheeses. Recipe can be prepared and refrigerated until serving time. Just increase cooking time to be sure casserole is heated through.
My mom found this "contest winning recipe" in the local newspaper in the '70's and I've enjoyed this recipe since. It's very comforting and kid-friendly the way the fried onions blend with the creamy filling. It's something I make for the flavor and not because it is so easy!
I find this recipe simple and the aroma mmmmm. The secret making hash browns is to partially cook the potatoes first so they do not discolor when you cook them. The cheese in this recipe helps them hang together so you get a golden cake of hash browns not just broken up bits. Boil your potatoes ahead of time and it will only take 10-15 minutes to finish them at breakfast
I made this recipe for Christmas dinner adapted from Cindy Kufeldt's recipe, just substituted the soup and lemon juice, add red pimientos and the result was fantastic. I am planning to make it adding also turkey or chicken leftovers, or maybe ham cubes.
