    Not really a 'recipe', just a way to serve them when you have a lots of kids over, and most important NO MESS to clean up. My DS's and their cousins really had fun with this, and they could layer whatever they wanted. I'm giving just an estimated quantity and serving is for 1 person. To free up your time buy presliced vegetables from the local salad bar in your supermarket, just place them individually in the plastic produce bag and place in salad bar container to keep ingredients apart.

Also, making my own cottage cheese results in whey, which I can save to add to other things. Whey is highly nutritious and helps regulate blood sugar levels.     I'm on a spinach feta craze right now. I'm not fond of most phyllo doughs but loooove pizza dough. I like calzones that don't have ricotta. How to satisfy all three? This concoction that was a lot of fun to make! Feel free to use another pizza dough recipe or a tube/bag of storebought dough, you need something that yields about one 12" pizza. Some Greek seasoning owuld also probably work great in this. A can with about a 5" diameter works as a nice cutter, so does a 10-oz ramekin or wide biscuit cutter. Cook/prep time doesn't account for the pizza dough. Depending on the dough yield and how much filling you put in each cutout, yields about 10-12 mini calzones.

    This is a recipe I created by combining all the ingredients I liked in other Ceviche recipes. Turn out to be a hit! Everyone loves it. I make this ahead of time and take it out on our boat. Served in plastic cups. Remember to keep chilled. This can be served as elegant or casual as you like.
