    This recipe was inspired by one of our favorite tapas dishes. It's just like we like remember it from our first date some 13 years ago. I incorporated 2 Zaar recipes to create this clone. All of this can be made ahead and warmed in the microwave before serving. The Sweet Red Bell pepper sauce really make this dish amazing!     Make these for your next party as an appetizer. Piroshki are a very popular pastry here in Greece, probably brought over with the return of the Greeks from 'Pontos', now a part of Russia. Here, they are traditionally fried, but I find them much too rich (although very good) that way. This version is baked, and does not suffer any (just less calories) for it. I have given 3 different filling recipes. One for meat, one potato, and one mushroom. They are all great and each recipe will yield enough filling for 20-22 pastries. The prep time approximate - the pastry does need two hours to 'rest'.

    These Russian Fried Cheese Pancakes (Patties), prounounced SEER-ni-kee, are delicious served hot out of the pan, the outsides still crispy, the insides creamy...     These little Venezuelan griddle cakes, known as arepas in Spanish, can be eaten at any time of the day, topped with cheese, meat, chicken, or eggs. You can top them with roast pork or a spoonful of pico de gallo as a delicious side or tempting appetizer. You use nonstick cooking spray quite a bit for this, but I like to use an olive oil spritzer. Enjoy!

    These are the hot carrots like you get in Mexican restaurants. They are positively addictive. I usually make a batch and share with a friend or neighbor. This recipe comes from a restaurant in San Diego called Alta Vista. It was owned and run by a woman named Mary Sargent. Her loyal customers were saddened when she closed her doors and retired, but at least we are able to make these delicious carrots.

    This Guacamole is quite amazing; easy, yummy and with no additional fat other than the avocado. No need to spend a lot of time chopping the ingredients as the blender will do the job anyway. The key is to add salt and lime juice 'to taste'; a bit more salt makes all the difference to bring out the avocado's flavour. Regular onion will work instead of red onion. It's best to use rubber gloves when working with hot peppers.

    From www.TopSecretRecipes.com This recipe is a copy-cat of the wonderful avocado sauce served at El Pollo Loco restaurants. It is great with taquitos, chicken or shrimp quesadillas. Don't expect an extremely thick guacamole, this is a thinner salsa--the consistency of the sauce you usually get with taquitos. Also, the heat of fresh jalapenos varies greatly. If you like milder salsas, remove the seeds; if you like it hot, don't bother removing them.
