These are lentils are delightfully different and will last 10 days or so in the fridge. This recipe makes heaps but they are so very morish. If you like red lentils you'll love this one!

These are absolutely to die for!!! They are not your ordinary taquitos. They're so good, I don't even use guacamole with them, although some still prefer them that way. Remember to get all your veggies in long thin strips. Time includes marinating.
I found this recipe in a circular a long time ago and have adapted it over time. Can’t remember which part of it is part of the original and what parts are my additions. This is a quick and easy side that perks up a basic grilled chicken breast or as a companion to tortilla chips.
Sometimes I will top a bed of greens with leftover grilled chicken and this salsa for an easy and flavorful lunch.
This recipe comes from 'Take 3 Cooks' cookbook. I've always been meaning to make it myself, because the pic looks heavenly, but have not yet gotten around to it. I'm posting this in response to a request, so let me know what you think! It suggests to use chocolate bourbon biscuits instead of Oreo cookies if you can't find them. Don't look at the calories! ;)

A little bit different to the usual Rice Crispy bars, they have a gooey toffee/chocolate taste. I think these are so much better using 'Special K' cereal, but you can substitute 'Rice Crispies' if you want.

The cake has no flour in it, so it's very light, and indulgent with its chocolate mousse and whipped cream filling. The recipe comes from Delia Smith, and I have tweaked it slightly.

Yummy pull-apart bread that was part of a county fair baking competition. It is baked in an angel pan and is delicious sliced and toasted. Slice it thin and use it for sandwiches. I make a double batch and slice it and freeze it with 2 slices to a baggie. Then take it out and thaw it and toast it. It won't stay in our house.
This makes a superb meal when you have friends coming over. Most of the prep work can be done the day before, it only takes minutes to throw together, it's colourful and healthy. Serve with fried rice (a combination of mint, coriander and shitake mushrooms in the rice works well).
