Famous Chefs - Jeff Smith, the Frugal Gourmet, recipes

A collection of recipes by Jeff Smith, the Frugal Gourmet. Well known and beloved PBS chef who could often be seen in Seattle. "Hot wok, cold oil, food won't stick!" The Frugal Gourmet, hosted by the white-bearded Methodist chaplain in a striped apron, aired on PBS from 1983 to 1997, making Smith a top chef on the network after Julia Child had established cooking as a staple for public TV. He died in July of 2004. Please let me know you if you find any recipes which should be added to this cookbook, thanks!

From Jeff Smith's "The Frugal Gourmet Cooks American" this recipe most closely resembles the English rice pudding I grew up with. PS: You're meant to eat it warm you silly bunch of yanks! ;)

    Recipe #144241

I love this recipe! It is from the "Frugal Gourmet Whole Family Cookbook" by Jeff Smith. I've made this simple recipe for many years. People are always impressed but... I never tell them how easy it is to make. Some recipes are best kept secret. But I will share this one...

    Recipe #118398

I copied this recipe from the Frugal Gourmet show years ago as I watched Jeff Smith prepare it. It certainly looked delicious and I had to try it. It is good! (Rise time is not included)

I adopted this recipe when Shelly left the site. Shelly is a spunky and intelligent girl who knows that all good comfort comes from carbs. I tried this with whole wheat spaghetti one evening for my solo dinner. It is a garlicky, filling dish with the eggs adding just a bit of protein to satisfy your hunger long term. Shelly found this in a Frugal Gourmet cookbook.

This is a recipe found in The Frugal Gourmet Cooks American. It is rich and different from your usual sweet-potato recipe.

Serving Ideas : Use on bread, roasts (lamb, pork), polenta, pasta Adapted from Jeff Smith's The Frugal Gourmet

    Recipe #72912

Different stew with a very meditteranean/greek flavor. Great served over rice or pilaf, or serve alone, with bread, a salad, and a nice red wine. Adapted from "The Frugal Gourmet".

One trick to great scrambled eggs is not an ingredient -- it's TIME. I really don't like scorched eggs so I take my time making them over very low heat and boy do they turn out nice. And I used to add milk to my scrambled eggs and omlettes until I saw The Frugal Gourmet (Jeff Smith) adding WATER. Don't ask me why but, in my opinion, water makes better scrambled eggs than milk -- that's subjective but it works for me. I also use red pepper because it digests MUCH easier than black pepper and tastes great too, adding almost no heat at all in this quantity. The ground red pepper also makes an attractive garnish. Finally, the aroma of a fresh orange slice garnish alongside these eggs just makes them twice as good as they already are. Finally, this recipe should very much help out NEW CHEFS who have experienced trouble in cooking eggs. Enjoy!

Spicy, Spicy shrimp dish, the best I've ever eaten. From "The Frugal Gourmet". Get your napkins ready...

    Recipe #37404

I've served this at several occasions and it has always been a hit. (It's very similar to the "pasta with sand" recipe elsewhere on Recipezaar.) Recipe is from Jeff Smith's "Frugal Gourmet Cooks Italian."

I viewed the recipes already posted and here's yet another version from Jeff Smith, The Frugal Gourmet. The prep time given is for cooking on the stove top and does not include chilling overnight.

This is easy to make -- the most discriminating barbecue fans rave about this sauce ! This is an adaptation from Jeff Smith (The Frugal Gourmet). This sauce terrific with baby back ribs--I typically serve this sauce with slowly smoked baby back ribs -- then dip each rib in this warmed sauce just before serving. True to the southern tradition of barbecue, this sauce is not meant to be added during grilling---but, hey, you're the chef! You can apply this to your grilled meat during the last 15 minutes of cooking. I make a large batch (can easily be doubled) because it freezes well. Cut the chili flakes in half (or omit) if you have a low tolerance for spicy food. July 10, 2009: A reviewer has stated I plagiarized this recipe; as you can see above, I have ALWAYS attributed the recipe to Jeff Smith, also known as The Frugal Gourmet; I further stated this version to be an adaptation---the reviewer correctly indicates that the mustard & beef stock are the only things changed. The reviewer correctly states this recipe doesn't make one quart. Next time I make it, I'll correct the estimated yield. As a writer and know plenty about what plagiarism is (and isn't). Apparently, the reviewer doesn't. Got my hackles up on this one!!

With apologies to Jeff Smith, the Frugal Gourmet, for using the substitute products in his recipe. But, GEE it is good! And healthy too!

    Recipe #41840

This is a simple, quick and tasty dish. It is obviously kid friendly because my 1 1/2 year old granddaughter ate 2 helpings at dinner, then more for breakfast and lunch the next day! This is courtesy of The Frugal Gourmet - On Our Immigrant Ancestors.

    Recipe #184099

Served at holidays this tradition started in our family years ago and was inspired by Jeff Smith's the Frugal Gourmet Holiday Cookbook.

This is another salad dressing that DH and I have been making for years. It is a variation of one by the Frugal Gourmet. We added more blue cheese. We enjoy it and hope you will too! (Jeff Smith's original recipe calls for 1/4 cup bleu cheese and 2 Tablespoons lemon juice. It is part of his Buffalo Chicken Wings recipe and comes from his 1984 book entitled The Frugal Gourmet).
