Although Graham Kerr is now an expert on nutrition and healthful eating, he's best known for his decadent cooking on the The Galloping Gourmet. Lots of butter, cream and healthy doses of humor helped make The Galloping Gourmet one of the most beloved cooking shows of all time. The Galloping Gourmet ended in 1971 after a tragic accident left Graham temporarily paralyzed and wife Treena suffering from long-lasting complications. Following years of rehabilitation, they co-founded Creative Lifestyle International, an organization that teaches people how to live better with less money. But more tragedy was to come: Treena's heart attack in 1986 prompted Graham to create a new cooking style called "Minimax," food with minimized health risks and maximum aroma, color, texture and taste. Both Graham and Treena have since fully recovered.

If I remember correctly, I got this recipe from the Graham Kerr TV show, you know the Galloping Gourmet who went to healthy cooking. I use Seattle Sourdough Round Twins and it works perfectly.

This is from Graham Kerr, the man who said, "If you are out of salted nuts, the best appetiser is champagne!" This is from Volume 1 of his CBC Television Cookbooks. I also have Volume 3 and it was published in 1969, so this recipe is some kind of late 1960s cocktail party creation. Graham's recipe notes include: "At heart this is a dish that everyone enjoys except those with ulcers and those who have a romantic meeting with someone who isn't at the party." and, "Vodka based creations blend well." I use party rye-sized pumpernickel bread for the "brown bread rounds" he writes of; also, this recipe is for 2 people only so increase if you're serving a crowd (makes a great summer party treat) but don't make them too far ahead.

This is a wonderful recipe that I got years ago from Graham Kerr, aka The Galloping Gourmet. I love that he always warmed a dish at the beginning to put the end product in. This is the recipe I first bought my heat deflector for. I also love his methods for cooking things -- such as to cover this with a cloth. The addition of mint makes this special. I hope you enjoy it -- we do!
