On October 2, 2001, I discovered the Recipezaar Web site. I immediately joined so I could post a request for a recipe I had lost. In less than an hour, I had a reply: this recipe. Unfortunately, I never posted it into the database -- until now. My mistake. This cake was the reason I joined, and the friendly response I received was the reason I stayed!
I got this recipe from a friend Lynn when we hosted a BBQ for our families (we shared an apartment a few years after college). My family loved this recipe. It's perfect for summer and eating outside, but wait to bring it out into the heat until you are ready to eat.
This is a winner!! It can be served as a salsa with chips or as a light summer salad. Everyone I have ever made this for loves it!! Even non-avocado lovers. This recipe came from allrecipes.com and I just lowered the oil content to make it more WW friendly.
These have been a favorite for years, when I serve these at my get togethers or make them for socials and large events they are always the first to go and everyone wants the recipe, I suggest to use large, extra large or even jumbo eggs for this, I like to make the yolk filling a day ahead and refrigerate this will blend the flavors --- for a nice presentation place each egg half in a colored paper muffin liner --- all ingredient amounts may be adjusted to taste --- see my recipe#259573
I have been grilling for many years and I guess I was stuck in my own zip code as far as the types of sauces I used . although after a trip to Jacksonville, Florida and a joint named Woodys my taste buds were introduced to the best sauce I ever had with pulled pork........MUSTARD SAUCE!!!!!!! This is my clone to this nectar of the gods.
If you smoke this sauce like I suggest even a pork roast done in the crockpot all day taste like you have spent all day by the pit with this sauce! I hope ya'll enjoy this new Texas treat.
