    Family-Friendly Fasting

    In the Orthodox Church, there are many days (most Wed & Fri, Advent, Lent, other assorted times) that are "fasting" days, where food prep translates as vegan and/or vegetarian. The strictness of the fasts vary, but can range from 'no meat but fish & dairy OK' all the way to complete abstinence from meat, fish, eggs, dairy, wine, and oil. Ideally the food should be simple to prepare, so as not to take much time/energy/concentration. These are some of the tried and true fasting recipes that our family uses on a regular basis....all in one place so I don't have to search for them again every time.     I love chocolate and this easy dessert really is a winner with my family. Its really chocolaty and satisfies my sweet tooth. I made my cake in two 8" round cake tins, but you can use other tins as I've mentioned in the directions. If you use ground flax as your egg substitute mix 2 tbsp. ground flax seeds with 6 tbsp. water, that equals 2 eggs. Make sure you let this sit until the flax is like a gooey liquid. Beat it with a hand mixer to help it congeal.

    this may sound odd, but this recipe tastes just like french toast but without the underlying eggy flavor. the yield of french toast slices depends on how much batter you load up per slice. if you put too much on, it will get pretty soggy. you can save any leftover tofu batter in the fridge for several days.

    This is a great way to use up leftover spaghetti, especially when there's enough leftovers for one and a half people, but four or five people to feed. Dehydrated minced onion can be substituted for fresh, and you can use grated Parmesan cheese (canned/bottled or fresh) if desired.     Baking tofu is a wonderful way for it to soak up all the delicious flavor in your marinade. In this recipe, the tofu has a bright, lemony flavor. If you have the time, let the tofu sit for an hour or so in the marinade before baking. However, if you are short on time, this step is not necessary. For those new to tofu, the block of tofu should be pressed between two plates, to remove any excess moisture from its packaging. Use a cast iron pan or heavy book. Baked tofu tastes even better the next day!
