A take off of Vietnamese fresh spring rolls that are little self-contained salads-to-go -- crisp raw veggies and lots of minced fresh herbs, along with cooked shrimp, pork, fried tofu but in this recipeI used ingredients called for in the RSC contest all neatly wrapped up in a deliciously chewy-soft, rice paper that you eat with your hands. They’re delicious, refreshingly cool, and fun to make as a group so each can place what they want into them. Perfect for a light summer meal, or hors-d’oeuvre. Being posted for the RSC contest. Which you needed to use the ingredients posted in the contest to make the recipe. Can be double very easily. Is served with 2 sauces both very different from each other and each complementing the duck. Rice paper rounds and rice vermicelli that are two of the essentials for this recipe so go ahead a alter this to add the vermicelli. Bean threads/bean vermicelli can be used in it's place.

This is a great dish for potlucks or cookouts. The cooking time is the time need to chill before serving.

Different! But so good! This dish is so complete it has the protien, carbs, fiber and bursting with flavor!

    Recipe #93993

This simple preparation enhances the duck without obliterating the natural flavor, and doesn't require a long marination. Perfect for a special meal. Preparation time does not include marinating time.

This Thai style recipe is a very easy meal to make. This dish is creamy, sweet, spicy.

When I created these waffles, I immediately fell in love with the rustic texture and the original flavor. I have to admit, I ate every single bite of the whole batch when trying to name these LOL. :) I do hope that you enjoy them. The cook time is what it took for both waffles to cook in my iron, but I believe my iron cooks rather quickly. Please keep in mind that all waffle irons are different (at least in my experieces!). I had a hard time deciding what the actual measurement was for the ground cardamom. It was closest to 1/8 teaspoon, but you can add just a touch more, as I feel it was a "heaped" 1/8 teaspoon, but definitely not 1/4 teaspoon lol :)

This is one of my entries for the Ready, Set, Cook! contest. Pancakes for dessert! Chocolate pancakes made with buttermilk and buckwheat flour. Not too sweet, and can be garnished with more than just powdered sugar, such as ice cream or fresh whipped cream. Serving size depends on the size of your pancakes. I like to make them about 4 inches.

Meatballs made with ground turkey in a tangy barbecue style sauce. Serve warm with toothpicks for a tasty appetizer.

I love cocoa and cherries (like Black Forest cakes, etc) and try to add more whole grains (like buckwheat) in my foods. Sometimes I add pecans or walnuts to the muffins too.

Dark, moist, slightly spicy pancakes. No one would ever guess the ingredients list. I served these with fresh blueberry/honey sauce. Probably would be wonderful served with glazed, cooked apples.

Pancakes don't always have to be sweet!

    Recipe #92947

This quick and easy recipe was my winning entry in RSC #5. This dish is colorful and a southwest spin on pizza. It is very spicy with the chipotles and the jalapeño cheese. I served it with a green salad and simple dessert. Update: Since several reviewers were having trouble with the crust, I tried this again & agree that two cans of crescent rolls would be an improvement in order to not stretch the dough so thin. I have also made this on a pizza crust & into quesadillas and liked those options too. I hope you enjoy my spicy creation!

With so many people having problems finding the sorghum, I revamped the recipe. This version produces a sweeter and lighter tasting muffin.

This recipe is a favourite with white rice, however the brown rice adds a more chewy texture and flavour that will please many.

Great company fare but simple and quick enough for everyday! It's a side dish. It's an appetizer. It's a main dish. It's excellent anytime and anyway you serve it! (Well I guess some might argue that, since this really might not be a good breakfast but....to each his or her own!)

The marinade becomes the sauce in this easy yet sophisticated recipe. (Submitted for the Ready Set Cook Summer 2004 Contest)
