    Enjoying a Delicious Vegan Breakfast!

I'm learning more and more that being vegan can be fun and taste great too! Most of these recipes are vegan with the main exception of one that I altered to make it vegan by using an egg replacer and coconut milk. There are a couple recipes that are not vegan because I use honey, but an alternative can always be used. There are 2 recipes I haven't tried yet, but sound so good that I know I'll get around to it soon!

This quick brekky is easily adaptable, using different types of juice and chopped fruit (I just love experimenting with oatmeal!!). I think the banana is important though. Enjoy!

Everybody loves these (not just people on special diets)! For a special treat, substitute blueberries or vegan chocolate chips for the nuts.

    Recipe #312803

Sounds absolutely delicious, though I haven't tried it yet. I added it in here for safe keeping, because I plan to make it as soon as I can get my hands on some berries! Was on a mother's day cooking show with the Micheff Sisters titled "Breakfast with Mom."

    Recipe #303287

I love scrambled tofu and this is a new recipe I'm dying to try. Only slightly modified. Found on Micheff Sisters cooking show titled "Breakfast with Mom." If you use water-packed tofu, make sure to drain it and squeeze the liquid out with paper towels ahead.

    Recipe #303286

A healthy snack or breakfast for kids and adults!

you can substitute any kind of nut- or even chocolate. the batter is quite thick, so i recommend making smaller pancakes, and 3 to a pan. from vegan with a vengeance.

For yummy biscuits and gravy! A good vegan comfort food for a hearty breakfast. We make this with our breakfast biscuits. Turn this into "sausage" gravy by adding Griller Crumblers or another vegan sausage/beef substitute. We usually always use crumblers with our gravy. We have a recipe for Recipe #252301 but I haven't tried using it with this gravy yet. Found this on Patricia LaVanture's cooking program. Enjoy!

    Recipe #260063

I love biscuits and gravy in the morning, but these biscuits are so much healthier than the typical bisquick! Of course these biscuits can be made with a variety of things, but we've always made them with our Recipe #260063 or with some yummy jam in the morning. Originally from Patricia LaVanture's cooking program.

My family loves this granola! We usually mix about 1/4-1/3 cup of it in a smoothie for breakfast every morning because it tastes so great with the smoothie and it lasts us a couple of weeks this way. Tastes great on its own or mixed with your favorite cereal also. You can also add some raisins after its finished baking.

These are the best hashbrowns I've ever had and it's hard to believe they are healthy and vegan! Nice and creamy. It's a great recipe to make ahead of time. It's easy to make in bulk and freeze for future use. These potatoes can also be made into patties before baking. Just form into patties on a cookie sheet instead of spreading them out, and bake the same. Remove from the oven when patties are golden brown on the bottom. May use purchased frozen potatoes, but make sure they are free of unhealthy hydrogenated oils. If you make them from home-cooked potatoes, it works best if potatoes are slightly undercooked. Cooking time doesn't count shreading and pre-cooking hashbrowns if using fresh potatoes. Recipe came from 7 Secrets Cookbook to lose weight, lower cholesterol, and reverse diabetes.

Would be vegan except for the honey. Anxious to see how these turn out as I love vegetarian sausages, but prefer eating things I've made from scratch. From "The Best of Silver Hills Delicious Vegetarian Cuisine" cookbook.

    Recipe #252301

Delicious for fall, winter, or whenever!

    Recipe #213952

I adapted this from a friend's recipe. My family requests this a lot for breakfast. Tastes great on toast or by itself. I LOVE avocado and find it tastes great sliced on toast with the scrambled tofu.

    Recipe #239129

Yummy nutritious vegan waffles. I made these for a cooking demonstration at my previous university and they were a hit! This recipe was adapted from the NEWSTART Lifestyle Cookbook. Keep them healthy by pouring fresh blended apples with some cinnamon on top or my Recipe #239131.

    Recipe #239130

This is a recipe we created when we first moved to the Philippines and hadn't been able to find syrup or applesauce in the stores. We've found the syrup and applesauce now, but keep coming back to this delicious syrup.

This is a Thai recipe creamy and not too sweet, with all the healthy benefits of bananas, so rich in bone-building phosphorus and calcium, heart-healthy potassium, vitamins A and B6. Great for those leg cramps!

    Recipe #136432

My mom used to give us decadent cinnamon-sprinkled toast, with butter or margarine to make the cinnamon-sugar stick. Now that I'm vegan and needed a butter alternative, I ended up creating this! Still has a dreamy flavor, but won't hurt you or the cows!

    Recipe #192052

Holy Colon-Blow, Batman! Please don't let the uber-healthy, fiber filled name of this recipe turn you off. (Because in reality, these are quite good, and good for you too!) My sweet girl, Lauren's folks gave us a 5 lb ricotta cheese container filled with WHEAT GERM, which they had bought in bulk. My frantic search for "wheat germ" recipes led me to this one--and I'm sticking with it! They came out nice and fluffy. Can be served with maple syrup, but I think fruit jam, jelly or even honey would be nice as well.

    Recipe #221439

Yummy vegan toast topping! This also tastes great if you use half the amount of cashew nuts and use pecans (or your favorite nut) for the other half. My family eats this on toast with a smoothie and granola almost every morning. Can prepare ahead of time.
