This recipe was inspired by the Super Energy Bars made by the coffee roastery down the street - they're my absolute favorite for a work-day pick me up! This is the 2nd version... it's a recipe in progress. The original used oatmeal instead of flour and no applesauce - it was tasty, but more like granola than bars. I'll keep adjusting and updating the recipe!
These no bake, high-protein, high-fiber bars are based upon Melissa Diane Smith’s recipe for Amaretto Protein Bars in her book Going Against the Grain and are a cinch to make.
The chocolate topping makes them seem a bit decadent (skip it if you must, they’ll still come out fine) – though dark chocolate, rich in anti-oxidants has now entered the echelon of power foods so I’ll keep it on mine.

this recipe went over really well with all the girls that i work with at the office. they have nicked named me "megan the vegan" because everything i make and bring to them is, well, vegan lol. i doubled the recipe so it made 24 muffins and they were all gone by lunch time.
These brownies are a total superfood - low calorie, nonfat, high protein, and high fiber. They're acceptable for South Beach Phase 1, and if you're on Weight Watchers, they're 1/2 a point each!! This is a recipe I came up with myself after getting sick of on the run meals and I wanted to make something that would keep well during the day and energize me--while also giving me the fiber, veggies, and nutrition I need. A bar for quick snack to tide you over or even a few "bars" for a meal replacement.
Obviously I like being healthy, so if you like the bread bar sweeter then use 3/4 cup of both brown and white sugar. This is good served warm with a slice of fat free cream cheese, cottage cheese, or even honey.
A very light, low calorie snack cake. I agree with the reviewers, not a browie at all, but that was the name on the recipe, so I stuck with it. Super easy, and a healthy way to get some carrots into a dessert!
Tasty and healthful. They're very moist and will change your opinion about spelt! I often change the fruit I add to this recipe, depending upon what I have. Shredded carrot and raisin is a great combo, or crystalized ginger and pear, or apple walnut, etc. Recipe works well without the banana, too.
