    In response to a request for cast-iron recipes. This recipe is the whole reason I bought my first cast-iron skillet. Now I am just waiting for the skillet to be seasoned well enough to make this! Cook time includes saute time for the corn.

    This is real comfort food. A family favorite. If you can, buy the fresh mozzarella. You won't believe the difference and it's worth it. The texture isn't rubbery like the typical mozzarella. I got it from watching an Emeril show on the Food Network.

    This is my new favourite recipe for pizza dough; it's so easy and works so well. I was watching a recent episode ("Pizza Party") of his show and went to the web as soon as it was over to get the recipe. Here it is, but the instructions are different than what you'll find on the web as I use my heavy-duty mixer rather than make this by hand. Enjoy!

Emeril's original recipe calls for deep-frying shoestring potatoes yourself, but I use the frozen-fry shortcut! I also seemed to need more masa harina than originally called for.     We adore this roast. The next day throw the meat, vegetables & gravy into a pot. Add a can of beef broth simmer. Thicken to a desired consistency and you have a wonderful stew the next day.
