Adapted from the New Basics Cookbook by Julee Rosso & Sheila Lukins(authors of The Silver Palate Cookbook), this is great served on the end of crisp Belgian endive leaves, atop soft scrambled eggs for brunch, or spread on grilled peasant bread toast.

    Recipe #133000

From the cookbook Vegetables From Amaranth to Zucchini by Elizabeth Schneider.

    Recipe #64236

This may be served as an appetizer with pizza sauce, or for a tasty sandwich, layer between toasted French bread slices!

    Recipe #45732

From Big Daddy's House, Dishes with Dad episode. If you like eggplant, you gotta try this!

    Recipe #388998

Eaten either hot or at room temperature, this is one of those simple, but ultimately satisfying dishes that goes with almost anything and is so good eaten on its own. Adapted from The Splendid Table, by Lynne Rossetto Kasper. This doubles easily.

    Recipe #129678

Yum! Recipe courtesy Bobby Flay from his show Bobby Flay's Barbecue Addiction, episode - Japanese Grillin'. I have tweaked it just a bit.

    Recipe #462414

A delicious vegetarian sandwich that I can't get enough of!

    Recipe #242095

I was doing some research on Eggplant Parmesan and came across this little goody. All the crispy goodness of traditional Eggplant Parmesan, only in bite size snack form. It fries up quickly, is crunchy, salty and guests can’t keep their hands off of it. This would probably be delish baked too. Adapted from Life's Ambrosia.

    Recipe #494108

Each piece of eggplant is dark and shiny and plump and soft, with wonderful complex flavors coming through-hot, sour, salty, and sweet! Adapted from Friedas.

    Recipe #267640

Easy and delicious! The flavors will explode in your mouth. You can add other grilled vegetables with it, such as portobello mushrooms or onions. You could even do this in a grill pan if necessary! From Bobby Flay and his show Grill It! with Bobby Flay, Episode: Grilled Sandwich Showdown.

    Recipe #462419

Adapted from License to Grill by Chris Schlesinger and John Willoughby. Make sure you get steaks that are really thick, so they can get a good, strong sear on the outside and still be rare at the center.

    Recipe #120682

Saw this on Sandra's Money Saving Meals, Episode: Seasonally Simple and thought I would share. I love veggie paninis and using a griddle or HOT skillet to lay on top of the paninis is genius! I have tweaked this just slightly, using olive oil in place of canola.

    Recipe #464364

These fries are definitely best eaten right out of the oven. As happens with many baked eggplant dishes, when the fries have a chance to cool fully, they can get a little limp and not nearly as delicious. Sprinkle flaky salt on them the moment they come out of the oven. You can also double the recipe for Lemon Tahini Sauce and spread it on sandwiches, fold a little into omelettes, or spoon it atop warm grain bowls. Store the sauce, covered, in the refrigerator and just thin it out with additional water if it settles or thickens. From the Kitchn.

    Recipe #508373

In the classic Indonesian dish, called Petjel Terong, the eggplant is usually deep-fried. In this healthier version, the eggplant is baked in the oven with a small amount of olive oil. The creaminess of the coconut milk and the peanut butter are heavenly. As a side dish, this serves 4, but will serve 3 as a main dish. From Nut Butter Universe by Robin Robertson.

    Recipe #497804

A Tyler Florence recipe from How To Boil Water-Everyday Perfection. Need I say more?

    Recipe #245178

This is wonderful served with rice. Put your rice on to cook 30 to 40 mins. before beginning stir fry.

    Recipe #37282

I love eggplant! This is a delicious way to prepare it. Very good!

    Recipe #33112

A great recipe using eggplant and spices. Adapted from Gourmet magazine. A Russian recipe! The ingredients are also typically African/Middle Eastern.

    Recipe #174779

Saw this on Hungry Girl on Food Network this morning, episode: Ginormous Food. A great way to cut those carbs!

    Recipe #464365

This is from Good Day for Grilling episode of Big Daddys' House with Aaron McCargo Jr. Good stuff!

    Recipe #429605
