    Eggscellent Eggs

Eggs are tasty, nutritious, convenient and versatile. They are an excellent source of protein, and provide vitamins and minerals. Store in the fridge in the original carton, and throw away any that are cracked, broken, or leaking. This is a collection of my favorite egg recipes on Zaar.

Great in a pita or on wheat bread. Cook time is for boiling the eggs.

    Recipe #177715

From the latest issue of Bon Appetit April 2006. We made this on the weekend but instead of stuffing the half egg slices, the mixture was mashed to make egg salad sandwiches! Just in time for Easter....

    Recipe #159531

This one was purely outa my head. I had a bad case of the *Hoongries* and nothing came to mind. These were the result. Rather good too.

    Recipe #37407

This is a quick and easy creamy egg curry to serve over rice. Perfect for a casual, mid week meal, when you want something on the table quickly, or serve for brunch. You will find hollandaise sauce in supermarkets. From the Australian culinary magazine, 'Delicious'.

    Recipe #111830

Wonderful for a weekend brunch, or for supper after the theatre, this curry is a joy to prepare when you feel like pottering about in the kitchen on a rainy day. It is nourishing, warming and yummy. I always serve it with either parathas or rice, with pickles and chutneys alongside. Use more or less chile powder and green chilies depending on how spicy hot you like your food. Adapted from a recipe by Madhur Jaffrey. For garam masala, see recipe #6588, Garam Masala II by Recipezaar. Add to it 1 tablespoon cardamom seeds, a 2-3 inch stick of cinnamon, broken up, increase the nutmeg to 1/3, and follow the same method. Use the required amount as per the recipe below.

    Recipe #106229

This yummy, easy dish was a recipe of my grandmother, who lived to 103 years! It is great comfort food served over rice, on toast for a Sunday night supper, or for a weekend brunch. It also teams well with Chile con Carne for a buffet meal. Even people who don't normally like canned asparagus, enjoy it. Note: fresh asparagus is not suitable as a substitute.

    Recipe #62412

We love this preparation. Great for a tiffin. I decided to post all egg recipes today.

    Recipe #82546

I just made this for my brunch.

From www.thesplendidtable.com. This is a recipe from by Shellagh Connelly and happens to be the favorite breakfast dish of my son. "Keep the eggs tender by slowly scrambling and not overcooking. A heavy non-stick pan is a great help here."

    Recipe #106549

This is Chef Rakesh Sethi's recipe from Mirch Masala. It looks very presentable. For vegetarians who want to try this, substitute eggs with 250 gms. cottage cheese(paneer), cut in cubes. The rest is just the same. Enjoy!

    Recipe #70082

This is one of the best omelets you get from vendors on the streets to have between bread slices with maybe some ketchup and green chutney applied to each slice. Have a bite of our street cuisine.

    Recipe #98927

A wonderful meal all by itself!

    Recipe #69892

A nice change of pace, and convenient on those days that I might have forgotten to thaw out the meat that I had planned to cook (again!). Something that my vegetarian stepdaughter will eat and yet at the same time, my husband doesn't feel like he's being punished for her dietary habits!

A really tasty omelette to serve for a brunch or lunch. Based partly on a recipe by Valli Little.

One of the first things I cooked and turned out perfect, and one of the few things I can cook without ever going wrong. It's easy and yummy too! My mom's recipe.
