Don't bother buying chorizo, it is so easy to make. You can mix in some eggs to make breakfast burritos, serve the cooked chorizo over refried bean, or make it into tacos. Plan ahead as this needs to sit in the fridge a day or two before using.
WOW! Do we love these fish tacos, and there are so many variations. This is one of my favorites and most authentic. Or, Think fresh grilled mahi-mahi slipped inside a thick warm corn tortilla and topped with thinly sliced cabbage, drizzled with lime juice and a splash of creme fresh. YUMMY!
This recipe is dedicated to my niece Ruth who lives in San Diego. When I visit we always drive down to Ensenada for fish tacos. The fish are fried in batter there. I've taken a few liberties and added beer and taco seasoning to the batter. I prefer the catfish nuggets because they are nice and firm, have a great taste and are usually the cheapest fish at the local market.
This is from a Taste of Home publication titled "Comfort Food Diet Cookbook." The recipe was sent in by Carrie Billups. The flavor is light and delicious, and you can taste the fish, so be sure to use a good quality.
We make this verde at the Firehouse. Everybody loves it no matter what fire station you're at and with what crew. It's a tradition to make GREAT CHILI VERDE in the FIREHOUSE and this is the one. ENJOY!
The cream cheese is the star in these enchiladas... I've never met a person who didn't enjoy these and they are so simple to put together. You can cook your chicken breasts for these anyway you want... I recommend putting a chili powder/garlic rub on them and baking them. You can also boil them in water and garlic salt, but the baking produces tender, flavorful chicken! Toss in some red pepper flakes to the chicken/cheese mixture for some heat!! Can't beat it! Recently I didn't have a can of the green sauce on hand, and had a crisper full of tomatillos! I made Recipe #51630 and WOW it was super. It takes of course a little more work and effort but it was really good. If you like tomatillos, give it a try when you have some extra time on hand.
This has to be the Cadillac of all savory cheesecakes. It has such elegant presentation and is so versatile that it is as comfortable at a wedding reception as it is for a BBQ! This is worth it's weight in gold!
Do you ever see those recipes that advise people to use "fat free tortillas?" I've never seen them in the stores, ever. So this is a great way to enjoy tortillas without the fat and cholesterol. I often make a bunch and then cut some of them up for tortilla chips and then freeze the rest of them.
As a young girl I would love making this meal for my family as it came my turn to cook. Only one problem, I never made enough. This recipe only serves 6. I always had to double my recipe. I am certain you might enjoy it too.
This is an old stand-by in my house! I always have the ingredients on hand, and my hubby loves them! Shhhh...don't tell him how easy they are!!! You can add anything you'd like to these! I like adding some leftover recipe #161522 inside!
