    Easy Lunch

For the weekends and rare days off I get during the week. Some of these can double for a light dinner when paired with a side.

Chill a beer for this nice and spicy dish! The elbows should be cooked al dente in well salted water to prevent broken mushy noodles. Do salt the water liberally. (2 teaspoons is not a lot once mixed with the rest of the ingredients) Seasons the pasta and avoids father salting in the recipe. This can be eaten as a side or a main balanced meal. I opted for yogurt and smart balance for better health. But you can use sour cream and mayo.

Serve with a good french baguette and a quality bottle of Zinfandel for a romantic evening. If we told you where we got the recipe, we'd have to kill you, lol. ;)

Everything that makes an egg roll great, without the deep-fat frying! I haven't tried this yet, just posting for safe keeping. **I've done a little research and think a great sauce may be the best accompiament I would suggest recipe #33113 by Bergy or recipe #89827 by Miraklegirl. Of course if you have a favorite sauce give that a try! Found on myrecipes web site

One of those email recipes I haven't tried yet, but it sounds so good with a margarita on a summer afternoon that I thought I would share it. Hope you enjoy!

From my Family Recipe Box, Mom loves this sandwich! "This sandwich is a 'smashing success'... in more ways than one. It's a great traveler." You must admit, it is pretty amusing. :) From the Family Recipe Box, dated 3/1/85. The sandwich keeps well, chilled, and is good for taking along on picnics and camping trips.

    Recipe #27931

Sandwich big enough to feed a crowd. You can make this up to 24 hours ahead, and just unwrap, slice and enjoy. Perfect for picnics.

My biggest challenge with these wraps is not eating all the cilantro pesto with chips before I can get them rolled up. Perhaps you will be more disciplined. If not, make a double batch of the pesto so you can snack without consequences. These a great healthy lunch, and are also pretty cut into slices and served as an appetizer.

This sandwich is a popular Panera Bread sandwich. It has a great spicy dressing and is served on their fabulous tomato basil bread, but it's also delicious on any hearty bread. My son works for Panera Bread and this is his favorite menu item. This recipe is typical of a California style gourmet sandwich, and represents the Western U.S. region.

Why these sandwiches are called Italians is a mystery to me since not one thing on them is Italian. But here in Maine you can go to any little general store or sandwich shop and get an Italian. Ham is the original, but other meats can be substituted (you have to specify like roast beef italian). Amato's is a sandwich shop up here that boasts the "Home of the Real Maine Italian".

Another great recipe from Southern Living. We have these for a quick, easy lunch when we are on the go. Omit any ingredient that is not to your liking. Add what you like. Very flexible.

A very easy and delicious dip to make for parties.

Middle Eastern style spread for Pita bread. This recipe is very tasty and easy to make. This is a very popular dish in this region. The base is usually Chickpeas and Tahini, but the flavor added to the base vary widely from one chef to the next. Tahini is a sesame paste, you can usually find it in the Mediterranean section of your grocery store.

Super easy, tasty and quick burritos. I make them with regular flour tortillas so that they come out the perfect size for my kids' small hands- if I made them with those huge burrito-size tortillas, they would never eat them! Great use for leftover cooked chicken. I divide the filling in two before I add the jalapeno and then add it to only one filling for the adults. These can also be served as an appetizer.

A quick, light summery lunch snack or starter. I didn't see this variation among the many similar recipes. A favourite brunch bite with us. Because number of servings will depend on how many eaters there are, the servings given below is a guess at how much a long baguette bread will yield. The quantity of onion and tomato given here will be enough for about 12 slices. Use your own judgement, though.

My DH always raved about my mom's pasta salad until I found the inspiration for this recipe in TOH June 2002. Now he doesn't like it any other way. I have modified the original recipe over the years & now need to post it here for safe-keeping because the clipping is falling apart. UPDATE: May 2010 - I'd like to add that this recipe has now been tested with gluten free pasta and turkey bacon and was just as delicious as the posted recipe. Keep in mind though that a little extra mayo was needed with the GF pasta. :)
