    Dr. Poon Metabolic Diet - Phase One

    Info on the Dr. Poon Metabolic Diet can be found at www.poondiet.com. There are three phases to the diet. I am currently on the first phase and collecting recipes in this cookbook that are or can easily be modified to fit the requirements. Some modifications necessary are to omit all salt, fruit, shellfish and dairy (egg whites are unlimited and a few whole eggs a week). The main staples of this phase are lean meats (extra lean ground meats), leafy greens and some vegetables. No potatoes, yams, carrots, tomatoes, or just about anything colourful.

    These are very tender when done. I use my own barbecue sauce and if you want more than 1 rack, you can easily lay more ribs on the pan. While they bake go do something else. Enjoy the day!

    This is my father's recipe and brings back such fond memories of my family. We always enjoyed this during the Holidays. We would have this in the mornings, spread on toast.     Have all the taste and texture of traditional maki sushi rolls but with way fewer carbs and no rice! This recipe utilizes vegetables in an interesting way in place of the sushi rice. I came up with this recipe as I love sushi but am cutting back on my carbohydrate intake. Sashimi was always an option, but sometimes you want more than just plain fish! Feel free to experiment with different fillings and combinations. The recipe below will provide 2 of each of the three versions of riceless sushi. However, the zucchini can be mixed with the carrots for a combo. The pureed cauliflower versions can also be kicked up with a hit of wasabi pureed in the mix. Have fun with this!
